Announcing… The Holiday Bucket List!

Most of my holiday traditions are based around Christmas, so in my family we are entering an incredibly tradition-rich, nostalgic, and charming time of year – familiar holiday music, the warm cozy glow of candles, the faces of people we love, babies in Christmas jammies (omg), twinkly lights on the frosted trees outside. And maybe best of all, the house is filled with the warm smells of classic recipes that make their appearance just a few times each year.

So this season we’re channeling all of the holiday food magic of the holidays into something brand new – the Pinch of Yum Holiday Bucket List!

What Is The Holiday Bucket List?

The Pinch of Yum Holiday Bucket List is a list of 8 of my favorite recipes that I consider must-makes for the holidays! They are fun, cozy, and special recipes that are annual traditions in my house.

Here’s how it works:

  • You make any of these recipes.
  • You enter to win prizes.

You can make one recipe and enter for an individual prize.

OR you can complete the entire bucket list (all 8 recipes) and be entered for our grand prize of $1,000 cash.

What if I want to make dietary modifications to a recipe?

That’s great! Everybody likes and needs different things when it comes to food. Make your subs and swaps, no problem! Send us the photo like usual, and if you leave a review it’s super helpful if you note what you changed about the recipe (used plant-based protein instead of ground beef, for example) in case others might want to do the same!

Can I share my recipe photo multiple times for more entries?

The only way to get a bonus entry is to leave a review on the recipe itself! As long as you use the same email address for both entries, that will count as two entries.

I would LOVE to see your recipe photos on Instagram as well – if you tag @pinchofyum I should be able to find them!

Can I enter the individual giveaways and the grand prize?

Yes!

How old do I have to be to participate?

To be entered to win a prize, you will need to be 18 years or older.

Do I need to live in the U.S. to win?

Individual prizes are limited to U.S. residents. The grand prize can be won by anyone worldwide.

How will winners be chosen?

By emailing your completed recipe image to us, you are entered to win the prize associated with that recipe. A bonus entry is counted when you leave a rating for the recipe on the blog.

Winners will be selected at random from individual recipe entries (combining email entries with rating entries).

Can I win multiple prizes?

You can enter them all! One prize per winner is allowed.

One prize per recipe and one grand prize will be awarded.

If your name is selected for a prize, a member of our team will contact you on December 21st through the email address used for your entry.

Vegetarian Shepherd’s Pie

Vegetarian Shepherd’s Pie! ♡ Ay yay yaaaay. This is good.

Shepherd’s Pie season is upon us and this super cozy vegetarian version is running around on the loose in our house. And did you hear me when I said veg only? Honestly, we don’t even need the meat – I promise these vegetables are the yummy kind.

Like, really yummy.

Like, sautéed with garlic and onion, sauced up with a sizzle of red wine, coated in a quick gravy, and baked under a layer of creamy mashed potatoes good. Want. Want. Want.

This is not a lentil shepherd’s pie, but if you want to add lentils for a little more protein punch, you do you.

Let’s Talk Mashed Potatoes

I decided to put Greek yogurt in my potatoes to gain a protein punch while still being creamy-tangy (gah, so good).

That being said, if you want this to be a completely vegan shepherd’s pie, just use olive oil instead of butter and maybe a splash of non-dairy milk in your potatoes and you will be golden. And if you’re gluten-free? I have a hack for you involving mashed potatoes – check the FAQs.

Can you smell it though? That red wine, garlic, olive oil, rosemary aromatherapy?

If you’re really looking ahead, I’ll also say that Shepherd’s Pie is a perfect after-Thanksgiving recipe, because guess what you have a lot of in your fridge after Thanksgiving? Leftover mashed potatoes. This is an amazing way to use up some of those holiday potato leftovers.

Important to note that this vegetarian shepherd’s pie is a total comfort food meets real food situation, so it’s going to require pajamas or sweats. A big fluffy sweater would be okay, too. Blanket, slippers, and candle are all optional. But a big appetite will be necessary. I know you can deliver.

Can I make this gluten-free?

Yes! Skip the flour and stir in about 3/4 cup mashed potatoes to the veggies and liquid to make a “gravy.” Easy. Tasty.

Can I make this vegan?

Sure! Use olive oil in place of butter and non-dairy milk in place of the yogurt.

Can I add meat to this?

The mushrooms give this a really nice umami and meaty flavor, but if you’d prefer, add browned ground meat to the gravy mixture. Yummy!

Vegetarian Shepherd’s Pie

Description

Vegetarian Shepherd’s Pie ♡ saucy mushrooms, carrots, and peas topped with creamy mashed potatoes. Real food meets comfort food!


Ingredients

Units

Vegetarian Shepherd’s Pie Filling:

  • 2 tablespoons olive oil
  • 3 shallots, minced (or some onions and garlic)
  • 16 ounces fresh mushrooms, sliced
  • 6 carrots, peeled and chopped (about 2 cups)
  • fresh herbs to taste (I used 1 sprig of rosemary, thyme, and a bay leaf)
  • 2 tablespoons tomato paste
  • 2 tablespoons flour
  • 1/2 cup red wine
  • 12 cups veggie broth
  • 1 teaspoon salt (more or less to taste)
  • 2 cups frozen peas

Mashed Potatoes:

  • 6 Yukon gold potatoes (about 2 pounds)
  • 1/2 cup full fat Greek yogurt
  • 1/4 cup butter or olive oil
  • salt to taste

Instructions

  1. Make the mashed potatoes: Peel the potatoes. Boil them until fork tender (you want them to mash easily). Drain, mash, and mix in yogurt and butter. Season to taste. (You can also use the Instant Pot method which is quick and easy! That’s what I do.)
  2. Make the veggies: In a large oven-safe pot, heat the oil over medium heat. Add shallots and sauté until fragrant. Add mushrooms, carrots, and whole herbs (you will pull the herbs out later). Sauté until carrots are softened.
  3. Make the gravy: Add tomato paste and flour to the pot and stir. Pour in the red wine (sizzzzle) and scrape all the browned bits off the bottom of the pan. Let the wine cook out for a minute or two. Slowly add the broth, stirring it in until a gravy starts to form. Season with salt. Simmer over low heat to get it thickened even further.
  4. Bake: Remove the herbs. Stir in the peas, spread the mashed potatoes on top (brush with butter to be extra awesome), and bake for 15 minutes at 350. I finished mine on the broil setting for a few minutes to get it nice and brown on top.
  5. Scoop up a hearty serving and live your best cozy life.

Pro Texture Tip: I chopped up half of my mushrooms so there would be a better texture variety in the filling. If you don’t want to use red wine, just sub a little more liquid. No problem.

House Favorite Roasted Brussels Sprouts

Let’s talk about these roasty, sweet, nutty brussels sprouts that combine those tender-crisp, whole-brussel bites with the ultra thin and crispy leaves, all coated with a lil’ mustard-maple drench and speckled with juicy bites of dried cranberry. Oh my gosh. WHY ARE THEY SO GOOD.

To be honest, I have very few “house favorites” in our house because I always change it up. Always trying new recipes, always moving on to the next thing. We hardly stay on any one recipe for more than just a few repeats because new! exciting! rah rah rah. But this recipe has been made WEEKLY for… um, the last five months? It has solidly earned its House Favorite status. We make these brussels sprouts all. the. time.

Dad loves them, toddler loves them, Mom loves them AND loves that everyone loves them. Also: guests love them, although usually if it’s more than just us, we’re going to need to double the recipe because, yes, in our house, we will for sure finish one pan between the three of us.

Ingredients These Roasted Brussels Sprouts

This is an SOS series recipe – as in, an excellent back pocket choice for when you just need to get something on the table quickly – so here’s our super short and sweet ingredient list:

  • brussels sprouts
  • walnuts
  • dried cranberries
  • maple syrup
  • Dijon mustard

And, of course, your standards: olive oil, salt, and pepper.

How To Make Brussels Sprouts That Actually Taste Good

Here we go!

  1. Prep your brussels sprouts. Cut off the base of the brussel sprout, remove the outer leaves, and cut it in half vertically. Turn on some music or a good show and go to town.
  2. Then, the brussels get tossed in olive oil and roast in the oven, cut side down, until they are nice and crispy.
  3. The walnuts get added for the last minute for a little toasting.
  4. The cranberries join the cool-down party.
  5. And finally, the sauce gets added directly to the pan. And by sauce, I mean an eyeballed little squirt of Dijon mustard and a solid drizzle of maple syrup (if you like things tangy, maybe a little balsamic vinegar too?). Get a little more olive oil, salt, and pepper up in there, maybe some red pepper flakes if you like things spicy, and ohhhkay yes.

That was easy. We are in business.

What To Serve with Brussels Sprouts

The brussels in and of themselves aren’t a meal (although, with the cranberries and walnuts in there…maybe they are?), but here are some ideas for what to serve them with – SOS STYLE.

The flavors of this recipe can go so many directions with whatever it is you’re eating. And I’m sure you can think of 100 or more fancier ideas to round out the table if you’re going for a more impressive-dinner-party situation, so don’t let me hold you back.

But for basic nights at home, when you want to really, truly, actually look forward to eating your vegetables, these basic, versatile, saucy, crispy sprouts are where it’s at.

I’m telling you – HOUSE FAVORITE.

I’m allergic to nuts. What can I substitute?

You could leave the nuts out completely or, if you can have seeds, you could add pumpkin seeds here. Once you add the pumpkin seeds, just keep a close eye on things so they don’t burn.

If they are more of a side dish, what can I serve these brussels sprouts with?

Great thing about these buddies is that they go with just about everything. Some ideas (if you have more time) include Date Night Lemon Pappardelle, these Swedish Meatballs, or this Skillet Chicken with Bacon and White Wine Sauce. YUM! (For SOS-friendly recipes to serve this with, see the list in the above section.)

How could I prep brussels sprouts in advance?

Brussels sprouts are really best fresh and crispy out of the oven, so for prepping ahead of time, I would recommend just cutting the brussels sprouts so they’re ready to get roasted, and whisk the mustard and maple syrup together so that’s ready to go too!

Can I add meat to these brussels sprouts?

Sure! Some diced pancetta or bacon would be great! You could also cook up some salmon to go with this very nicely.

Are there any herbs I could add to this?

Absolutely! Thyme and/or rosemary would be lovely additions to this.

Can I add cheese to this?

That sounds delicious! Yes. Crumbled goat cheese or feta cheese would be delicious.

House Favorite Roasted Brussels Sprouts

  • Yield: 3-4 servings

Description

These House Favorite Brussels Sprouts are the best side veg and are speckled with bright bursts of cranberries and nutty walnuts. The perfect addition to any meal! 


Ingredients

  • one 12 oz. package raw brussels sprouts, halved
  • 2 tablespoons olive oil
  • a pinch of salt and pepper
  • a handful of walnuts
  • a handful of dried cranberries
  • 1 teaspoon Dijon mustard
  • 2 tablespoons maple syrup
  • extra olive oil, more salt and pepper, maybe some red pepper flakes if you want to spice things up

Instructions

  1. Preheat the oven to 425 degrees. Place brussels sprouts cut-side down directly on a baking sheet. Drizzle with oil and sprinkle with salt and pepper.
  2. Roast brussels sprouts for 15-20 minutes, until cut sides are very brown and some of the leaves are crispy. Add walnuts, mustard, and maple; return to oven for 5-10 minutes to get the walnuts toasted. (You can choose to either add the sauce now, or when the pan comes out of the oven in step 3. If you add it now, it gets kind of baked into the brussels, but if you add it when they’re done baking, it’ll be a little more saucy. I like it both ways. Your choice!)
  3. Remove from oven. Toss with cranberries directly on the baking sheet. Season and serve immediately. Yumo!
