Salmon with Basil Sauce and Tomato Salad

Hello and happy summer to you, me, and this amazing salmon with basil sauce!

That bright green basil sauce is the green sauce of summer 2023 for me – pour it over spice-loaded, caramelized salmon and throw a little tomato salad on the side and you have a very happy dinner.

We’ve been eating this ON REPEAT in our house lately!

How To Make This Salmon with Basil Sauce (with Pictures)

Step 1: Make the Basil Sauce

Just blitz, blend, do your thing. I use this mini chopper for nearly all my sauces these days!

Step 2: Rub The Salmon with Spices

It’s a little bit satisfying, I’m not going to lie.

Step 3: Bake The Salmon

Ten minutes before it’s time to eat, we pop this guy in the oven. I usually either use a meat thermometer, to check the temp (140 is a great benchmark) or I just sacrifice one end of one piece to check for doneness.

Step 4: Assemble and Serve

Everybody builds their own plate! We layer in rice and a simple tomato salad.

Only requirement: make sure everyone gets lots of basil sauce.

I have a real emotional attachment to this basil sauce (or some version of it) because it originated at a family cabin in Wisconsin. There was a huge basil plant on the dock, and we harvested it liberally, and for weeks we ate ev-er-y-thing smothered in basil sauce.

Last week, when I breathed in my first bunch of fresh summer basil, it took me right back. Lightbulb. Craving. Basil sauce time.

One of my all-time favorite things in life is when I find a recipe that makes everyone in my family happy. And this meal has something for all of us: lots of protein to make Bjork happy, lots of big flavor to make ME happy, and enough elements that no matter what the mood is in the kid department, they can find something they will like.

Against all odds, my preschooler regularly asks for seconds and thirds on salmon whenever we make this, and my toddler literally cleans out the sauce blender with a spatula. And I’m not saying that’s going to happen for everyone. But I’m saying it does sometimes happen for us, and I am always shocked, and I always play it cool, but it’s making me super-extra love this recipe right now.

Salmon with Basil Sauce and Tomato Salad

Description

Summery salmon with a beautiful, big-flavored basil sauce and a simple little tomato salad.


Ingredients

Units

Spice-Rubbed Salmon:

  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon coarse kosher salt
  • 1 teaspoon granulated sugar
  • 1 tablespoon olive oil
  • 1 lb. salmon filet, cut into 23 pieces

Basil Sauce:

  • 1/2 cup packed fresh basil
  • 1 small bunch of fresh chives
  • 1 teaspoon dried oregano, optional
  • 3/4 cup mayo
  • 1/4 cup grated Parmesan cheese
  • 12 tablespoons water or lemon juice (to make the sauce thin and smooth)
  • small pinch of salt, to taste

Tomato Salad:

  • 1 1/2 cup halved cherry tomatoes
  • 2 ear sweet corn, cut off the cob
  • 12 cups fresh spinach or spring greens
  • 1 tablespoon olive oil
  • 2 tablespoons minced chives or parsley
  • salt, pepper, and garlic powder to taste
  • 2 cups cooked rice or grains for serving (I use precooked to make it easy)

Instructions

  1. Prep: Prep the tomato salad.
  2. Make the basil sauce: Blend the basil sauce ingredients until mostly smooth. 
  3. Prep the salmon: Preheat the oven to 425 degrees. Mix the spices in a small bowl and stir in the olive oil. Coat the salmon with the spice paste.
  4. Bake the salmon: Bake on a parchment-lined baking sheet for 9-12 minutes, or until 135 degrees in the thickest part. (It’s all personal preference, but this is the doneness that we like best – it’s a medium-well done salmon.)
  5. Assemble the meal: Plate the salmon over the rice, serve with salad, and spoon the sauce over the top. Season with salt and pepp. Mwah!

Frequently Asked Questions For Summer Salmon With Basil Sauce

What herb(s) can I use instead of basil?

Personally, I love the basil here and I think it’s kind of the star! But if you wanted to try something else, I would try swapping in some fresh dill or fresh cilantro to make something that more closely resembles an herbed ranch dressing!

How long does the basil sauce last?

I’ve kept it as long as 5 days in the fridge.

What other protein would work well here?

This would be great with chicken or shrimp!

Chicken: Coat chicken breasts or thighs with the spice rub and pan-fry them for 4-5 minutes per side until cooked through. (I’ve done this, and it’s great.)

Shrimp: Coat them in the spice rub and sauté for 4-5 minutes total until cooked through. (I haven’t done this, but it should work great.)

Can you make this vegetarian / meatless?

Yes, I think you could also do something similar with tofu – here’s a recipe that has a similar build using tofu as the protein! I think this would also be great with roasted sweet potato or cauliflower in place of the salmon.

How do you make this gluten-free and/or dairy-free?

This recipe is naturally gluten-free and dairy-free! Just be sure whatever “grain” you’re using to build the bowls is gluten-free, like rice or quinoa.

Can you cook the salmon with a different method, like grilling?

First of all, YUM. Secondly, yes, but you’ll just want to adjust two things: 1) the spices on top, and 2) the timing. As written, the oven easily creates a crusted golden exterior with the spice rub on the salmon, but on a grill, if you flip the salmon face-down, the spice rub will stick and burn to the grates. I would just follow a grilled salmon guide like this if that’s what you want to do!

14 Things I Bought For Summer That I Cant Live Without

Let’s go on a summer shopping spree!

These are some of my summer favorites, and I’ve split these items into 3 categories:

So here it is – a list of 14 things that I’ve purchased with my own money that I now cannot live without for summer!

Actual Growth For My Eyelashes and Brows

Product: Dime Eyelash Boost Serum and Eyebrow Enhancing Gel

What I love:

  • Noticed lash growth
  • Noticed brows filling in
  • Beautiful product design
  • Easy and fast to use

What I don’t love:

  • Eyelash serum occasionally stings

I bought these a couple months ago for my thin and sparse eyebrows and eyelashes. I bought these a couple months ago for my thin and sparse eyebrows and eyelashes. New All-Time Favorite Denim Shorts

What I love:

  • The length is perfect – not too short, not too long
  • The rise is perfect for me – all my slightly cropped shirts land just above the waist (like the picture)
  • Not stretchy, so they wash well and stay snug on my hips without riding up
  • Fitted but not tight
  • Distressing on the light wash gives them the perfect casual look and feel

What I don’t love:

  • Nothing!

I am passionate about these shorts! I am wearing them right now while I write this! I have the light wash, which I just absolutely adore, and I just bought purple lotus and the indigo wash as well. They are, hands down, my favorite shorts right now. They’re my perfect rise, my perfect length, and they give the perfect casual-but-semi-put-together look. It depends on how you want them to fit, but I sized down one full size from my normal jeans size and they fit me just right.

Really Good Basic White Ribbed Bodysuit

Product: Kinship Ivory Ribbed Bodysuit

What I love:

  • Super soft
  • Super stretchy
  • Ribbed texture gives it some interest
  • Good sleeve length
  • Ideal for all kinds of sleek layering

What I don’t love:

  • Runs a bit small, IMHO – I prefer to size up on this one

Seen here with a Canadian tuxedo, but most commonly worn with overalls (my uniform) or a cute pair of shorts! I wear a lot of overalls and just denim in general, and this bodysuit is a go-to. It gives a perfectly sleek look, but the ribbing on the shirt prevents it from being overly tight or showy. It’s on the thinner side, but I actually enjoy the weight of the material. It’s breathable and light so you don’t feel so heavy and constricted – just make sure you wear a nude bra if you don’t want it to show. I would recommend sizing up on this one! There’s enough soft stretch in it to keep it form fitting, and the bigger size will make it a little more roomy and comfy.

Now I Wear A Sun Hat

What I love:

  • Floppy and cute
  • Brim is nice and wide
  • Stays put really well
  • Beautiful golden color
  • Quality of the straw-like material feels really nice

What I don’t love:

  • Can be hard to travel with since it’s big and you don’t want it to wrinkle

I had to have plastic surgery on my face this spring to remove a severely atypical pre-melanoma spot, so now I am aggressive with my sunscreen and my sun hat usage. The good news is: I actually really enjoy this hat! It’s pretty, feminine, casual, and the quality feels super nice. I think you probably could travel with it, but I love mine so much that I don’t want it to bend or wrinkle so I travel with my less-nice hat instead. This is my prized favorite summer sun hat!

The First Chunky Gold Hoop Earrings I’ve Ever Loved

What I love:

  • The chunk factor is so cute
  • The size is great for a statement that’s not TOO statementy
  • Holding up well to pool usage, outdoor time, and daily wear and tear
  • Comfortable even for sensitive ears
  • Costs less than $10

What I don’t love:

  • Nothing!

I bought these as a “let’s try these and see if I might become a gold hoop person” and it absolutely worked. I especially like the weight of these – they are chunky in the cutest way, so they really pop and have a bit of playfulness to them. I’ve worn them in the pool, on several trips, for lots of daily activities, and they are still holding up great, especially for costing less than $10.

The Holy Grail Of Kid Jammies

Product: Cat and Jack Kids’ Jammies

What I love:

  • SOFT SOFT SOFT
  • Supremely comfortable
  • Fun, patterns that are not overly gendered
  • Affordable

What I don’t love:

  • Nothing!

In my experience, Target kid jammies have historically been kind of stiff and scratchy, and I’m really particular about making sure the girls have something comfy to sleep in. We buy a lot of jammies from Little Sleepies, but they are super expensive. Which is why I’m SO SO happy that Target is now starting to sell similarly soft and comfy jammies with fun patterns at a fraction of the price. This is the first season I’ve seen these soft ones, and we absolutely love them. We bought every single pattern available for both girls! Our 4 year old giggled about her “hippo jammies” for two weeks straight and I love that they’re – did I say this already? – SO soft.

And The Holy Grail Of Kid Sandals

Product: Ten Little Kids’ Sandals

What I love:

  • Cute for all kinds of outfits
  • Super supportive and “healthy” for all types of kid movement
  • Cooling
  • Secure with closed-toe coverage – I never worry about flopping or slipping
  • Not meant to be waterproof, but dries out easily

What I don’t love:

  • Nothing!

My children wear all manner of weird and obscure clothes to play in, but when it comes to jammies and shoes, I’m kinda picky. I want their shoes to be cute enough for my eyeballs to not glitch every time I look at them all summer, but also I want them to be top-notch comfortable and supportive for all types of activities – running, jumping, climbing on things they shouldn’t climb, etc. These sandals are THE ONLY SHOES my girls wear in the summer. We have water shoes, tennis shoes for soccer, and these. They both get one pair of summer shoes and this is the one! We love these shoes.

A Really Great Kids’ Bike

What I love:

  • Top quality
  • Intentionally designed for kids
  • Lightweight which makes it easy to maneuver, balance, and learn
  • Simple styles

What I don’t love:

  • Expensive

We are new into the bike era of parenting! We’ve been getting by with cheap or free bikes from Buy Nothing, Facebook Marketplace, and neighbors, but this summer the time has come for us to get a proper kids’ bike for our 4 year old. This bike brand was recommended to use by some friends who have older bike riders, and it is awesome. High quality while also lightweight for easy balancing and learning.

The Glass Bottles I Use For Everything

Product: Liter Glass Milk Bottles

What I love:

  • Perfect size for small batches
  • Multi-use – iced coffee, simple syrups, juices, etc.
  • Cap makes it easy to travel with – we often to take these to friends’ houses

What I don’t love:

  • Nothing!

We use these things ALL THE TIME, and especially in the summer! I put batches of agua fresca in them, or iced coffee, simple syrup for the NA Margs… they are so versatile. I never knew I needed them until I bought them, and now we can’t live without them.

The Griddle That Never Leaves My Stovetop

Product: Lodge Cast Iron Reversible Griddle

What I love:

  • Reversible!
  • Perfect for quesadillas, pancakes, grilled sandwiches, smash burgers, reheating or re-crisping things
  • Heavy duty
  • Long enough to cover two burners so you can do lots of food at one time

What I don’t love:

  • Can be heavy and awkward to move – which is why we don’t move it! 🙂

This is now a permanent fixture in our kitchen! It sits on our stove and it gets used almost daily for anything ranging from pancakes to grilled sandwiches, quesadillas, smash burgers, toasting buns, and fried bread for toasts. I can do a bunch of food at one time which means less waiting around for everyone’s food to be ready. As a family of 4, we love this thing!

Smash Burger Essential Tool

What I love:

  • Solid and heavy
  • Works perfectly for smash burgers

What I don’t love:

  • Nothing!

Two words: Smash Burgers! We make these smash burgers all summer long, and you just can’t do it quite right unless you have a grill press. This is the one we use and love!

My New Summer Hobby

Product: Blackstone Flat Top

What I love:

  • Can cook a wide variety of foods on it: pancakes, smash burgers, stir fry, etc.
  • Fun for summer and fall entertaining
  • More user-friendly for people who aren’t huge into grilling (me)

What I don’t love:

  • Requires a moderate level of maitenance

This is a fun toy. I prefer this to our grill because it’s just like having one huge frying pan, but outside! And it works well with the types of foods I like to make: pancakes, eggs, bacon, sandwiches, quesabirria, noodle stir fry, fried rice, smash burgers, etc. It takes a bit of work to season it – I’m still getting mine perfected since we got some rust this winter – but it’s such a fun way to bring a bigger variety of food into your outdoor cooking repertoire.

I Am So Passionate About These Drinking Glasses

Product: Glass Tumblers by Williams Sonoma

What I love:

  • Delicate glass
  • Thin lip
  • Dishwasher safe
  • Really nice size
  • Just so beautiful

What I don’t love:

  • Nothing!

I get that not everyone cares about glasses the way I do, but I am certifiably obsessed with these glasses. We’ve been drinking out of mason jars for years and while that’s totally fine and good, I really get a lot of enjoyment from a delicate, thin-lipped glass. So I decided to go for it and buy an actual adult-like set of glasses, and these are now my pride and joy. For sure one of my top five favorite things in my kitchen. Drinking out of these is a very delightful experience.

Chicken Teriyaki Burgers with Sesame Slaw

Coming in hot: the last recipe for this run of the SOS series, AND my new favorite recipe!

It’s super easy (thank you, store-bought sauces) and the flavors feel almost universally appealing. It’s the epitome of crowd-pleasing. In my life, it was quickly approved by all categories: kids, husband, and friends. And most importantly, VERY approved by me.

The simplicity but also the layers? The salty-sweet with the tangy and the buttery, sesame depth? I don’t exactly know what made me fall so hard and fast, but I could eat this every night for a week and not get sick of it.

Toasted brioche always does it for me – you get that signature crispy inside, soft-squishy-outside, and I’ve found that I really enjoy these with a shmear of yum yum sauce! It’s sweet, mild, creamy, and already in the fridge since we used it a couple weeks ago for that feisty chili crunch tofu.

The chicken teriyaki burgers themselves are juicy and caramelized, fry up in a matter of minutes, and the pile of sesame slaw on top is perfectly tangy and vinegary. I’m drooling just thinking about them. GO!


Make The Sesame Slaw

Toss cabbage with rice vinegar, sesame oil, salt, and sugar.

Toast Your Buns

I use brioche buns, and I toast them in a dry skillet over medium heat until golden and soft.

Make The Burger Mix

Just ground chicken, teriyaki, and panko, plus some salt and garlic powder.

Fry Your Burgers

I split the chicken into 4 chunks, form into burgers, and fry them in batches in a nonstick pan or grill pan.

Assemble The Teriyaki Burgers

I like to use Yum Yum sauce on the buns (top and bottom) and then top with a burger patty, slaw, and gently squish it together into one amazing sando.

Chicken Teriyaki Burgers with Sesame Slaw

Description

These Chicken Teriyaki Burgers are amazingly simple while also being ridiculously delicious. Caramelized burgers that are fried up in minutes, a pile of sesame slaw on top, and a perfectly toasted bun. YUM.


Ingredients

Units

Chicken Teriyaki Burgers

  • 1 lb. ground chicken
  • 1/4 cup teriyaki sauce
  • 1/2 cup panko breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt

Sesame Slaw

  • 2 cups shredded cabbage
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 cup chopped green onions (optional)

Extras

  • 2 tablespoons avocado oil for frying
  • 4 brioche buns
  • 1/4 cup yum yum sauce (or mayo, sriracha, chili crisp, whatever sauce you like)

Instructions

  1. Make the Sesame Slaw: Toss the slaw ingredients together. Taste and adjust.
  2. Make the Burgers: Combine chicken, teriyaki sauce, panko, salt, and garlic powder in a large bowl. Mix with your (clean) hands until well-combined. Form into 4 large patties.
  3. Fry the Burgers: Heat a bit of avocado oil over medium heat. Add the burgers to the hot pan and cook for 3-5 minutes until golden and mostly cooked through; flip to finish for another 2-3 minutes. Cook until no longer pink in the middle, or a meat thermometer registers at least 165 degrees Farenheit.
  4. Toast Buns:  Wipe out the skillet if there are burned bits left in the pan. Pop your buns into the skillet for just a second, cut side down over medium low heat, to get them lightly toasted.
  5. Assemble Burgers: Spread top and bottom buns with yum yum sauce, place a burger, and top with the sesame slaw. Press burgers together, slice into it, and enjoy your life. I love these so much.

Notes

Burger Mixing: If the mixture is sticking to your hands while forming the burgers, try getting them a little bit wet with water. That usually helps me with the sticking.

How Do You Make These Chicken Teriyaki Burgers Gluten-Free?

Here are the products I would use to make this gluten-free:

  • In place of the buns: Udi’s Gluten Free Burger Buns
  • In place of the teriyaki: Primal Kitchen Gluten Free Teriyaki Sauce
  • In place of the panko: finely chopped nuts, or crushed Rice Chex cereal

What Goes Well with These Burgers?

Some ideas:

How Do These Burgers Keep As Leftovers?

  • Buns: these do well in storage, even after toasting! Just keep them in a ziplock-type bag for a couple days.
  • Cabbage: the slaw doesn’t keep well, so while you can prep the cutting ahead of time, the saucing and tossing is best right before serving.
  • Burgers: the cooked burgers will keep in the fridge for 1-2 days and can be reheated on the stove or in the microwave. I think they are better made and eaten fresh, but I am not above eating these as leftovers.
