Lemongrass Broth Bowls with Yellow Curry Chicken

Truly. Lemongrass, ginger, shallot, and the brightness of lime! I just love these flavors so much.

Broth bowls have been (hate to say it) *trending* in recent months and I’m notoriously late to the trend, but now I’m here, and I’d like to campaign for all of us to make these, pronto.

How it works: Make a simple, bonkers-delicious broth – like, drinkably good – then pour it over rice, protein, and some fresh little garnishes. It eats like a soup, but also kind of a salad? Which is exactly the type of food I like to eat in winter.

Such a nice little warm-up lunch moment:

The flavors are similar to that of a tom kha gai, which is a creamy, aromatic Thai soup (also similar to this one). Genuinely think these are some of the greatest flavors in the world.

  • Shallot
  • Ginger
  • Lemongrass
  • Lime
  • Coconut

Then pour that delicate broth over rice, charred yellow curry chicken, and some fresh little garnishes. OOH YUM. I’m lazy so I usually do my chicken thighs in the air fryer (aff link), but a sheet pan or skillet will work just as well.

Imagine this fragrant broth steaming up in your face. Peak cold-weather coziness. I think you’re going to love it.

How To Make These Broth Bowls

Cut Up Aromatics.

They’ll simmer and then get removed, so large chunks work great!

Simmer the Broth.

Give it 20-30 minutes on low heat. Then remove the aromatic chunks, but save that creamy, flavorful broth!

Cook the Chicken.

Toss to coat, then air fry it! (Or sauté or grill, if you’d rather.)

Plate It Up!

Garnish. So Good.

I actually love this with mint on top, but cilantro is also delicious. Chili crisp, crispy shallots (I buy the ones from Trader Joe’s – or make your own here), and if I want some extra veg in there, I’ll throw a handful of spinach in.

Description

Lemongrass, ginger, shallot, and the brightness of lime! The broth bowls have got it all – luscious broth, fluffy rice, protein, and fresh herbs.


Ingredients

Units

Lemongrass Broth:

  • 2 shallots
  • a small knob of ginger
  • 12 stalks lemongrass
  • 3 cups chicken broth (I used 3 cups water + 1 heaping tablespoon Better Than Bouillon chicken base)
  • 1 can coconut milk
  • 3 tablespoons brown sugar
  • 2 tablespoons reduced-sodium soy sauce (more to taste)
  • 1 tablespoon lime juice

Yellow Curry Chicken:

  • 1 lb. boneless skinless chicken thighs
  • 1 tablespoon yellow curry paste (I use Maesri, bought on Amazon – sub Thai Kitchen red curry paste)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil

For Serving:

  • 1 1/2 cups rice
  • Mint, chili crisp, crispy shallots (for topping – to taste)

Instructions

  1. Start The Rice: Start cooking your rice according to package directions.
  2. Prep Aromatics: Peel and roughly chop shallots, ginger, and lemongrass into large chunks. Add to a saucepan or stock pot.
  3. Simmer the Broth: Add the broth and coconut milk. Simmer over a low heat for 20-30 min. Discard aromatics; reserve the broth. (I scoop the chunks out with a small wire mesh colander or spider strainer.)
  4. Season It: Add soy sauce, brown sugar, and lime juice to the broth; whisk to combine, taste and adjust.
  5. Make the Chicken: While the broth is simmering, toss chicken with curry paste, garlic powder, salt, and olive oil until well-coated. Air fry the chicken at 390 for 12 min, or until 165 degrees. (You can also just sauté in a pan until cooked through.) Chop chicken into bite-sized pieces.
  6. Serve: Plate rice, then chicken, and then pour broth over the top. Garnish with mint, chili crisp, and crispy shallots.

We really enjoy salmon in our house. But it’s also one of those foods that has to be done right, ya know? It needs the right seasoning, the right sauce, the right method of baking to turn into a meal that you genuinely look forward to eating.

Tips For Buying Salmon

Whether you’re a salmon pro or a newbie, here’s what I look for when buying salmon for these recipes!

Farm-Raised vs. Wild-Caught

The difference between farm-raised and wild-caught salmon is, no surprise, how the salmon are raised! Wild-caught salmon is typically leaner and has a fishier flavor because of its environment, while farm-raised is fattier with a milder flavor. I’ve used both, and while both are delicious, I do typically prefer the taste and texure of farm-raised salmon.

Fresh vs. Frozen

This is really just a matter of preference and convenience – I prefer to get fresh salmon to avoid the process of thawing when it comes time to make dinner, but some might say that frozen salmon is actually fresher if it was flash-frozen after being caught. So it’s a “you do you” based on the time and energy you have!

Sustainability

Wild-caught salmon is generally a more sustainable option, but since I tend to prefer the flavor of farm-raised salmon, I also wanted to share how to make that choice more sustainable! I use this sustainable salmon guide to find what the best choices are (location, certifications, etc.). I usually look for salmon that is ASC or BAP certified, which should say right on the package!

Chipotle Salmon with Orange Salsa and Aji Verde

My Husband Claims This Is The Best Salmon He’s Ever Had.

As soon as I slathered that chipotle brown sugar rub on the salmon, I knew that we were going to love it.

As if that buttery, flaky, smoky-sweet salmon wasn’t enough – add a little juicy, colorful salady salsa on top, and a garlicky aji verde on the bottom of the bowl for the green sauce lover in the family (ME), and we had a total showstopper meal that immediately earned a place in the “best salmon recipes” category for our family.

One of my daughters liked the salmon and green sauce (a win!), one of my daughters went back for seconds on the complete bowl, and both Bjork and I commented throughout the whole meal about how much we loved the flavors and textures.

(I realize this picture doesn’t look like much but I was just standing there eating that juicy orange salsa out of the bowl while waiting for the salmon to bake. For this batch, I had run the cabbage through the food processor. It’s SO yummy.)

The ingredient list looks a little long, but there’s a lot of overlapping ingredients. And it’s very straightforward:

  • Bake the salmon.
  • Blend the sauce.
  • Toss the salsa (or salad? it’s kind of both).

Pile it all into the bowl, and feel like you’re in a restaurant. Hope you guys love this one. It’s just a vibrant bowl of freshness that I’ve been needing lately.

Ingredients

Units

Chipotle Salmon

  • 1 1/2 pounds salmon filet (I have used both skinless and skin-on; either works)
  • 2 tablespoons taco seasoning (I use Siete)
  • 2 tablespoons brown sugar
  • 1/4 to 1/2 teaspoon chipotle powder, depending on spice preference
  • spritz of avocado oil

Orange Salsa

  • 3 large navel oranges, cut into chunks (peeled with a knife, pith removed)
  • a small wedge of purple cabbage, finely shredded or pulsed in a food processor (about 2 cups)
  • 1/2 cup chopped cilantro (ribs and seeds removed)
  • a small wedge of red onion, minced (about 1/4 cup)
  • 12 tablespoons olive oil or avocado oil
  • juice of 2 limes (23 tablespoons)
  • half of a jalapeño, minced
  • 1 tablespoon sugar + 1/2 teaspoon salt (more to taste)

Aji Verde

  • 2 tablespoons olive oil
  • 1/2 cup mayo
  • 1 cup cilantro leaves and stems
  • half of a jalapeño pepper (ribs and seeds removed)
  • 1 clove garlic
  • juice of 1 lime
  • a pinch of salt, to taste

Other

  • Rice for serving

Instructions

  1. Make Orange Salsa: Toss all ingredients together except oranges; massage with your hands to soften the cabbage a bit. (You’ll add the oranges until right before serving, so they don’t turn pink.)
  2. Make Aji Verde: Blend the aji verde sauce until smooth.
  3. Prep Salmon: Preheat oven to 450 degrees; place a rack near the top. Pat salmon dry with paper towels. Place on a sheet pan lined with parchment (I just leave the filets in one whole piece). Mix seasoning for salmon; coat salmon filets with seasoning. Spritz with a light coating avocado oil.
  4. Bake Salmon: Bake for 5 minutes near the top of the oven. Then broil another 4-6 minutes until cooked to your liking (I like it to be medium, about 135 degrees).
  5. Serve: Add oranges to the slaw mixture. Put rice and aji verde side by side on the bottom of a plate or shallow bowl. Then flake a few chunks of salmon on top, and finish with a scoop of the salsa. Chef’s kiss!

Notes

If your salmon has skin, place it skin side down on the baking sheet.

In the ingredient photo above, you’ll see cotija cheese which I do often add to my aji verde – however, for the final version, I felt like the sauce was more harmonious for this dish without the cotija, which is why it’s not in the final written ingredient list.
