Easy Veggie Enchiladas

Veggie enchiladas in a pan.
This recipe is sponsored by V&V SUPREMO®

Hello to all the lovers of easy veggie enchiladas! The kind that are saucy, cheesy, filling, and just so cozy when pulled hot and bubbling straight out of the oven. Also, the kind that are actually easy to make, and they have, like, a haul of ACTUAL veggies and authentic Mexican cheese tucked into those warm, soft, sauce-soaked tortillas.

Including:

  • Sweet potatoes
  • Peppers
  • Onions
  • Broccoli (!!)

And really, just about any other veggies you could want. Spinach, mushrooms, corn, poblano peppers, squash, cauliflower… literally all of the above can work.

These are enchiladas, yes, but really, mostly, this is a thing that you make to celebrate the fact that eating really good, cozy food can also mean eating lots of healthy vegetables and that all of it can come into existence with one snap of your veggie-loving fingers.

Veggie enchiladas in a pan with Chihuahua Cheese.

As established, the cheese is the hero here, but can we pause for a second to give honorable mention to black beans, red enchilada sauce, corn tortillas, and a really yummy-tasting veggies?

You know I have opinions about this. Please locate yourself a bag of creamy, smooth-melting, authentic and delicious V&V Supremo® Chihuahua® Brand Quesadilla Cheese. You can buy a very large bag at Costco and you will go through it in approximately three days because it’s so good on, oh, let’s see, EVERYTHING? It’s the only kind of shredded cheese I use to add authentic flavor in my Mexican and Tex-Mex-ish recipes – truly the cheesy, melty gold standard!

How to Make Vegetarian Enchiladas

Vegetarian enchiladas should start with… yeah. Veggies.

LOTS OF THEM.

Here’s my easy, easy, easy approach:

Veggies on a roasting pan.

Pile them all on a sheet pan and roast them. That’s it. That’s the secret.

This is a one-sheet-pan approach. Some veggies might cook a little faster. And it’s all gonna be okay. We just need everybody soft enough to be edible and folded into our filling.

Which… is going to look like this. Don’t be scared.

Filling for veggies enchiladas in a bowl.

The veggie / bean / cheese combo is going straight into some corn tortillas, which are getting a nice generous covering of enchilada sauce.

Pouring sauce on veggie enchiladas.

And the whole thing is getting tucked in with more V&V Supremo® Chihuahua® Brand Quesadilla Cheese. Oh, the sweet meltiness!

Sprinkling cheese on veggie enchiladas.

I can think of no more wonderful thing to pull out of your oven tonight than a pan of these healthy, veggie-loaded beauties.

Chicken Meatballs with Peppers and Orzo

Chicken meatballs with peppers and orzo in a bowl.

Chicken meatballs with peppers and orzo = the actual dinner BOMB, like, in a really good way.

This recipe just really gets me excited.

Not to be dramatic but in my experience there’s something magical about the combination of panko and Parmesan loaded quick chicken meatballs, tangy tomato sauce with garlic and sautéed peppers, and a silky-creamy-delicious pile of hot orzo on the side. This is the kind of recipe that just calls you straight home to the dinner table, you know?

Basically this recipe has two prep steps.

  1. Roll your chicken meatballs.
  2. Chop your peppers.
Peppers and garlic in a bowl.

Now cook them and combine them.

Add a can of tomato sauce and capers because YUM. So salty and briney.

Chicken meatballs and peppers in a pan.

And pile onto hot, creamy, cheesy orzo.

I made mine creamy with mascarpone cheese but honestly, you don’t need to be that extra about it. Just get something that’s going to creamify the orzo a bit and toss it together while the orzo is hot.

Mostly I’d like to go on record and say that this just tastes like heaven in a bowl.

The ideal bite involves a cut piece of golden brown chicken meatball, plus a good coating of tomato sauce, a few pieces of pepper and maybe even some bitey capers, plus a little scoop of creamy, cheesy orzo all up in there to balance it all out.

Yes to that, times 100 more bites.

Description

Chicken Meatballs with Peppers and Orzo! The BEST combo. Quick chicken meatballs, tangy tomato sauce with garlic and peppers, and a silky-creamy pile of hot orzo on the side.

Ingredients

Chicken Meatballs:

  • 1 pound ground turkey or chicken
  • 1 egg
  • 1/2 cup panko
  • 1/2 cup grated Parmesan
  • 1/2 teaspoon each garlic powder, onion powder, and kosher salt

Sauce:

  • 2 large cloves garlic, minced
  • 1–2 cups sliced peppers (see notes)
  • 1/4 cup capers (optional)
  • 1 14-ounce can plain tomato sauce
  • 1 teaspoon kosher salt (more or less to taste)

Creamy Orzo:

  • 8 ounces uncooked orzo
  • 1/4 cup of something creamy – I used mascarpone, but you could also use cream cheese, goat cheese, cream, or butter
  • kosher salt, Parmesan, and parsley for finishing

Instructions

  1. Meatballs: Mix meatball ingredients together. Roll into meatballs. Heat a skillet over medium high heat. Add a swizzle of olive oil. Add meatballs and cook until browned on all sides. Remove from pan and set aside.
  2. Sauce: Add peppers and garlic to the same pan, plus a little more oil if you need it. Get all the yummy browned bits off the bottom of the pan. Sauté for 5-10 minutes.
  3. Sauce: Add meatballs back into the pan. Stir in tomato sauce and capers. Bring to a low simmer and let it hang out (add a little water if it gets too dry).
  4. Orzo: Cook orzo according to package directions. Drain and toss with something creamy. Season with salt, Parmesan, and parsley.
  5. You’re Done: Plate and serve! Top with more Parmesan and parsley because you are just that fancy.

Notes

Peppers: I used mini peppers which are small and sweet! You can also use regular bell peppers if you cut them into thin strips or small pieces.

Vegetarian Shepherd’s Pie

Vegetarian Shepherd’s Pie! ♡ Ay yay yaaaay. This is good.

Vegetarian Shepherd's Pie in a pot with scoop taken out.

Shepherd’s Pie season is upon us and this super cozy vegetarian version is running around on the loose in our house. And did you hear me when I said veg only? Honestly, we don’t even need the meat – I promise these vegetables are the yummy kind.

Like, really yummy.

Like, sautéed with garlic and onion, sauced up with a sizzle of red wine, coated in a quick gravy, and baked under a layer of creamy mashed potatoes good. Want. Want. Want.

This is not a lentil shepherd’s pie, but if you want to add lentils for a little more protein punch, you do you.

Vegetables on a sheet pan.

Let’s Talk Mashed Potatoes for Shepherd’s Pie

I decided to put Greek yogurt in my potatoes to lean towards healthy while still being creamy-tangy (gah, so good).

That being said, if you want this to be a completely vegan shepherd’s pie, just use olive oil instead of butter and maybe a splash of non-dairy milk in your potatoes and you will be golden.

And if you’re gluten free? I have a hack for you involving mashed potatoes – check the recipe notes.

Meat or no meat, dairy or no dairy, gluten or no gluten… let’s work with everyone here.

Vegetables cooking.

Can you smell it though? That red wine, garlic, olive oil, rosemary aromatherapy?

If you’re really looking ahead, I’ll also say that Shepherd’s Pie is a perfect after-Thanksgiving recipe, because guess what you have a lot of in your fridge after Thanksgiving? Leftover mashed potatoes. This is an amazing way to use up some of those holiday potato leftovers.

The mashed potatoes usually need a little help since they dry out a bit in the fridge, so just heat them up with a little water or milk and get them nice and creamy again, and then spread that magic on top of your silky, veg-packed mushroomy gravy.

Important to note that this vegetarian shepherd’s pie is a total comfort food meets real food situation, so it’s going to require pajamas or sweats. A big fluffy sweater would be okay, too. Blanket, slippers, and candle are all optional. But a big appetite will be necessary. I know you can deliver.

Watch How to Make Vegetarian Shepherd’s Pie:

When you pull this out of the oven and the sauce is bubbling up around the sides under the lightly-golden-brown potatoes and your whole house smells like a log cabin in the northwoods?

That will not be a sad moment for you.

Description

Vegetarian Shepherd’s Pie ♡ saucy mushrooms, carrots, and peas topped with creamy mashed potatoes. Real food meets comfort food!

Ingredients

Vegetarian Shepherd’s Pie Filling:

  • 2 tablespoons olive oil
  • 3 shallots, minced (or some onions and garlic)
  • 16 ounces fresh mushrooms, sliced
  • 6 carrots, peeled and chopped (about 2 cups)
  • fresh herbs to taste (I used 1 sprig of rosemary, thyme, and a bay leaf)
  • 2 tablespoons tomato paste
  • 2 tablespoons flour
  • 1/2 cup red wine
  • 1–2 cups veggie broth
  • 1 teaspoon salt (more or less to taste)
  • 2 cups frozen peas

Mashed Potatoes:

  • 6 Yukon gold potatoes (about 2 pounds)
  • 1/2 cup full fat Greek yogurt
  • 1/4 cup butter or olive oil
  • salt to taste

Instructions

  1. Make the mashed potatoes: Peel the potatoes. Boil them until fork tender (you want them to mash easily). Drain, mash, and mix in yogurt and butter. Season to taste. (You can also use the Instant Pot method which is quick and easy! That’s what I do.)
  2. Make the veggies: In a large oven-safe pot, heat the oil over medium heat. Add shallots and sauté until fragrant. Add mushrooms, carrots, and whole herbs (you will pull the herbs out later). Sauté until carrots are softened.
  3. Make the gravy: Add tomato paste and flour to the pot and stir. Pour in the red wine (sizzzzle) and scrape all the browned bits off the bottom of the pan. Let the wine cook out for a minute or two. Slowly add the broth, stirring it in until a gravy starts to form. Season with salt. Simmer over low heat to get it thickened even further.
  4. Bake: Remove the herbs. Stir in the peas, spread the mashed potatoes on top (brush with butter to be extra awesome), and bake for 15 minutes at 350. I finished mine on the broil setting for a few minutes to get it nice and brown on top.

Notes

Gluten Free Variation: Skip the flour and stir in about 3/4 cup mashed potatoes to the veggies and liquid to make a “gravy.” Easy. Tasty.

Vegan Version: Use olive oil in place of butter and non-dairy milk in place of the yogurt.

Meat Version: Add browned ground meat to the gravy mixture. Yummy!

Pro Texture Tip: I chopped up half of my mushrooms so there would be a better texture variety in the filling. If you don’t want to use red wine, just sub a little more liquid. No problem.
