Red Curry Lentils

Now is a good time to:

  • get a few candles going
  • immerse your house in the flavors and smells of your favorite classic comfort-food-but-still-kinda-healthy simmering stovetop recipes.

For example, RED CURRY LENTILS DUH.

These red curry lentils are one of my all-time favorite recipes. As is usually my vibe, we’re working with very basic pantry ingredients here and simple, straightforward prep. It’s hard to mess this one up.

Just cook your lentils and toss them in up this spicy red curry sauce with sauteed onions and a shot of coconut milk.  OH MY PERFECTLY SPICY GOODNESS.

I’ve kind of had a fling with lentils lately. Or wait, like, over the last 8 years. These guysthis one, that other one, and now a walk down memory lane back to the original that started my love affair? I can barely stand it. If you’ve never made lentils before, this is a perfect recipe to introduce you to the magic of the most cheap, healthy, versatile, and absolutely delicious little food in the pantry. The Humble Lentil reigns supreme.

Will you eat a big plate of these red curry lentils with rice? Or will you scoop up a creamy bite with a warm piece of naan? Or will you eat it cold out of the fridge with exactly zero judgement from me?

Red Curry Lentils

Description

Red curry lentils is my all-time favorite lentil recipe. Thick, creamy, saucy, and perfect as leftovers. Plus it’s healthy and easy!


Ingredients

  • 1 1/2 cups lentils, rinsed and picked over
  • 1/2 large onion, diced
  • 2 tablespoons butter
  • 2 tablespoons red curry paste
  • 1/2 tablespoon garam masala
  • 1 teaspoon curry powder
  • 1/2 teaspoon turmeric
  • 1 teaspoon sugar
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • a few good shakes of cayenne pepper
  • 1 14-ounce can tomato puree
  • 1/4 cup coconut milk or cream
  • cilantro for garnishing
  • rice for serving

Instructions

  1. Cook the lentils according to directions. Drain and set aside.
  2. Melt the butter in a large saucepan over medium high heat. Add the onion and saute for a few minutes until fragrant and golden. Add all the spices (curry paste, garam masala, curry powder, turmeric, cayenne, sugar, garlic, ginger) and stir fry for 1-2 minutes. Add the tomato puree; stir and simmer until smooth.
  3. Add the lentils and the cream. Stir to combine and simmer for another 15-20 minutes (the longer, the better)! Serve over rice and garnish with cilantro.

Biscuits and Gravy Egg Bake

Holiday times mean big food times, and big food times mean WE START WITH BRUNCH.

My love for this biscuits and gravy egg bake is borderline over-the-top. There are zero things not to love about a casserole-style dish of fluffy eggs and cheddar baked up with little bites of tender flaky biscuit pieces poking out the top, and buried under a blanket of creamy, savory, mildly spicy green chile sausage gravy.

It is THE brunch dish of 2020 for me because:

  • It’s so easy.
  • It’s a crowd favorite.
  • Each piece gets smothered in green chile gravy.
  • Repeat: green chile gravy.
  • And how about just a little more gravy.
  • It’s really, really delicious.

I like to pick up all the ingredients for this at ALDI: Simply Nature Organic Whole Milk, Simply Nature Organic Cage Free Eggs, Bake House Creations Jumbo Buttermilk Biscuits, Appleton Farms Premium Pork Sausage, Pueblo Lindo Chopped Green Chiles and really good Happy Farms Shredded Mild Cheddar Cheese. Super short ingredient list.

If I manage to venture out to the store, even though I have a short list, what are the chances I find a few other yummy ALDI holiday treats waiting for me on the shelves? 100%.

But also, what about if you’re not wanting to / able to leave the house right now? VERY RELATABLE. You can shop ALDI via Instacart which is how I do 90% of my real-life ALDI shopping. Not sure about you, but I almost always have to work a little harder to make my cart total get past $35 for free delivery because ALDI is so affordable! Oh darn, looks like I need to throw in a few extra boxes of our favorite wheat crackers, a couple of packages of amazing marinated olives, and at least three bricks of goat cheese with blueberries. Shoot. Bummer. …How soon can it get here?

Okay, biscuits and gravy egg bake.

Here’s what happens: we just layer all the good things. Whisked eggs, biscuits, cheddar cheese, green chile sausage gravy…

We might just need to call it like it is: the holidays are probably a little weird for most of us right now. A brunch with close family and friends can make it seem just a little more normal. Even if that brunch is for a smaller group than we’d wish for.

Food is my ultimate favorite way to bring little joys into the everyday, and in this season, HOLY SMOKES we need those little joys! We need that biscuits and gravy egg bake. We need extra sausage gravy. Whisk the eggs, grate the cheese, pop the biscuit pieces in there, and let’s eat.

My friend Sarah (of Sarah’s White Chicken Chili fame) told me about this recipe on Tasty a few years ago and I just finally got around to trying it! I changed up the layers a bit from their version, and I knew I had to make it a green chile gravy when I saw a local restaurant with biscuits and green chile gravy item on their takeout brunch menu, which is how we ended up at this delicious biscuits and green chile gravy egg bake point in our lives!

Ingredients

Green Chile Sausage Gravy

  • 1 lb. Appleton Farms Premium Pork Sausage
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 2 cups Simply Nature Organic Whole Milk
  • 1/2 teaspoon salt
  • 1 can Pueblo Lindo Chopped Green Chiles

Egg Bake

  • 8 Simply Nature Organic Cage Free Eggs
  • 1/2 cup Simply Nature Organic Whole Milk
  • 1/2 teaspoon salt
  • 12-ounce tube of Bake House Creations Jumbo Buttermilk Biscuits (about 68 biscuits), cut into small cubes
  • 1 cup Happy Farms Shredded Mild Cheddar Cheese

Instructions

  1. Cook the Sausage: Brown the sausage in a large cast iron skillet. Remove from pan. Drain off excess grease.
  2. Make the Gravy: Melt butter in the same cast iron skillet over medium-low heat. Whisk in flour; stir until thickened, 2-3 minutes. Whisk in the milk, about 1/2 cup at a time, until a smooth gravy comes together. Add salt, diced green chiles, and sausage back to the gravy. Stir to combine. 
  3. Whisk the Eggs: In a separate bowl, whisk eggs with milk and salt. 
  4. Assemble the Egg Bake: Preheat the oven to 350 degrees. Place half of the biscuits over the bottom of a greased 9×13 pan. Pour eggs over top. Sprinkle with cheese and dollop with some of the gravy (but save some gravy for later). Arrange with remaining biscuits. Bake for 35 minutes, until eggs are set. 
  5. Eat Up: Serve slices warm from the oven, with a scoop of that green chile sausage gravy over the top (thin it out with a little more milk so it’s semi-pourable, since it usually thickens as it cools). Brunch dreams realized.

Notes

Prepping this in advance: The egg bake can be prepped completely in advance and stored in the refrigerator. I’d recommend bringing it to room temperature for 30 minutes before baking!

Cozy Homemade Peppermint Mocha

Is it just me or have peppermint mochas taken over December life?

There is just no fighting it – it’s early morning, it’s cold outside, the wool mittens have made their annual appearance, Christmas music is pumping. Like, AS IF there is any restraint when it comes to a Peppermint Mocha pit stop. As if.

The baristas always get a little annoyed with me because I’m one of those people who has a super particular order that takes at least 15 sentences to communicate (full fat, no whip, and half the amount of syrup and chocolate) (if you’re a barista, I’m so sorry for my ways), but nevertheless, the December morning peppermint mocha is always, always, always worth it.

That first creamy, minty, rich dark chocolate sip? YASSSS.

I’ve developed something of a habit, which is great, but it also means that I now cannot start my day without a peppermint mocha. (Or Cashew Coffee. Or an Oatmilk Honey Latte. Just really any hot cozy drink.) I mean, like, even if it’s totally ridiculous and out of my way to find one, it must be done. This is my dilemma.

But friends! Good news of great joy!

In these days where we AREN’T driving to work or we want to stay home in our PJs instead of venturing out for the must-have coffee shop drink of the season, there is now a cozy 10-minute homemade alternative that can be prepped to our very own liking with no looks from the baristas.

Christmas Miracle? I think so.

What You Need to Make This Coziness Happen

What we are dealing with here are deliciously decadent peppermint mochas made at home with about five simple ingredients in ten minutes or less. Featuring:

  1. Milk
  2. Unsweetened Chocolate
  3. Homemade Mint Simple Syrup which will blow your mind with its ease of prep
  4. Rich coffee or espresso
  5. Whipped Cream + Candy Cane toppings bcz we’re divas

Simmer, shake, pour, top. That’s it.

This peppermint mocha should probably come with a warning: BEWARE. HABIT FORMING. NO TURNING BACK. But you knew that already, right? Ain’t nobody got time for warnings when there’s a peppermint mocha to be had.

Cozy up, grab a blanket and a book, and get your December on. Oooooh, it just gives me the happy chills!

Cozy Homemade Peppermint Mocha

Description

Cozy Homemade Peppermint Mocha! Creamy, minty, rich dark chocolate… SO yummy. Cozy up, grab a blanket and a book, and get your holidays on.


Ingredients

For the Mint Syrup

  • 1 1/2 cups water
  • 1 1/2 cups sugar
  • 1 bunch fresh mint leaves OR 1 teaspoon peppermint extract (or a combination of both)

For the Mocha

  • 3/4 cup milk
  • 1 ounce unsweetened chocolate bar or baking bar (not cocoa powder)
  • 1/2 cup espresso or strongly brewed coffee
  • whipped cream
  • crushed candy canes

Instructions

  1. Bring the water to a low boil. Add the sugar and stir until dissolved. Add the mint or peppermint extract and steep for 10-15 minutes (heat off or on low) until the syrup has good flavor to it. Remove the mint leaves and store in the refrigerator for future peppermint mochas. 🙂
  2. Heat the milk and unsweetened chocolate together until melted (could be in the microwave or on the stovetop).
  3. Add the milk mixture to a glass jar. Put a cap on the jar and wrap with a towel (the metal lid will get hot). Shake until foamy.
  4. Pour the milk mixture into a mug. Stir in the coffee and 2-3 tablespoons of mint syrup. Top with whipped cream and candy cane pieces.
