BBQ Jackfruit Sandwiches

Hi! Meet your new friend, the most saucy, meaty-like BBQ sandwich with a crunchy slaw on toasted brioche bun that is so filling, so day-making, so flavorful and easy, and also…totally meatless.

That’s right. We’re calling upon that can of JACKFRUIT to impress us with her meaty-textured ways here, and she does not disappoint.

What You’ll Need To Make BBQ Jackfruit Sandwiches

Here are your short-ingredient-list essentials for this beautiful towering crunchy-saucy sandwich:

  • a can of jackfruit
  • chickpeas
  • BBQ sauce
  • slaw
  • buns

Plus or minus some extras like garlic, a few extra spices, maybe some pickles and/or hot sauce as a topping, and boom. You’re there.

New To Jackfruit?

Let’s talk about this meaty-but-not-meaty filling for a moment.

If you’ve never cooked with canned jackfruit, listen up. You’re in for a fun adventure because IT’S SO EASY, pantry-friendly, and just really unique. The hardest part is probably finding it, but even that isn’t too hard: most health-emphasis or specialty grocery stores carry it, and when all else fails, Amazon!

When you push on the jackfruit pieces with the back of a wooden spoon or fork, they press apart into shreds that resemble shredded chicken, pork, etc. And when you add spices, a little brown sugar, and some BBQ sauce and let it all fry up in a pan? You’re going to get some really nice sweet and smoky roasty-ness on that jackfruit that is going to make you wonder where it’s been all your life.

And to take things to the next level, my friend Melissa has taught me the way: get some blitzed up chickpeas in there with those jackfruit shreds to kind of boost up the oomph factor and make it really feel substantial, filling, and crave-able.

Now To Some Sandwich Styling

Toppings are your choice, naturally, but I am a big proponent of just a bag of store-bought coleslaw, especially in these SOS times that we are in. Do I prefer the delicate texture of a homemade cabbage slaw? Yes. But when I’ve got 100 other fires to put out in the house, like, NOW? That is not the moment for me to be shredding up a head of cabbage.

Other toppings that I’ve loved that require zero advance prep: avocado, pickles, pepperoncini, and hot sauce. Whatever gives it a little zip and zazz and maybe even a little bite – that’s what I like.

Should you eat a pile of jalapeño cheddar kettle chips with your sandwich? I mean, do you love yourself? I think that is the real question at hand.

Source notes: I finally got the push I needed to try jackfruit from my friend Melissa when she posted this recipe and swore that it was really, actually a good meaty alternative. And I had my doubts but dang, she was right. Her idea for the chickpea addition is unique and honestly… just super smart. What else can I use jackfruit for?

Lots! Jackfruit is a great vegetarian substitute for almost any recipe that requires shredded chicken or pork.

Can I omit the brown sugar?

The brown sugar really helps balance all of the flavors here, so it’s best to keep it in. You could try reducing the amount though if you’d prefer.

I can’t find jackfruit in a brine. My canned jackfruit is in water. Will that work?

That should still work! You might just need to add a little squeeze of lime to bring all the flavors together.

Description

These BBQ Jackfruit Sandwiches feature a “meaty” mix of jackfruit and chickpeas tossed in spices, garlic, and a bit of BBQ sauce. Pile it all on top of a toasted bun with slaw and dinner is ready! 


Ingredients

BBQ Jackfruit

  • 1/4 cup olive oil
  • 14-ounce can young jackfruit in brine, drained and rinsed
  • 1/2 cup canned chickpeas, drained and rinsed
  • 2 cloves garlic
  • 1 tablespoon brown sugar
  • several good shakes of paprika, chili powder, and onion powder
  • a pinch of salt
  • 1/4 cup barbecue sauce

Slaw

  • ideally, a pre-made slaw bag mix!
  • otherwise: thinly sliced cabbage + mayo, lemon juice or vinegar, sugar and salt

The Rest:

  • toasted buns (I like brioche buns)
  • any other toppings you like – I’d recommend avocado, pepperoncini, pickles, hot sauce, etc.

Instructions

  1. Shred the Jackfruit: Heat the olive oil in a pan over medium high heat. Add the jackfruit and break it apart into “shreds” with the back of a spoon. 
  2. Make the Filling: In a small chopper or food processor, pulse your chickpeas and garlic until they have a finely chopped texture. Add the mixture to the pan, along with the brown sugar and spices. Stir it all up to get it seasoned and happy. Add barbecue sauce and let it get a little roasty. More undisturbed time in the pan = more meat-like browning.
  3. Assemble Sandwiches: Serve your jackfruit BBQ on a bun topped with slaw and anything else you like! Add a pile of salt & pepper chips to your plate and you are in delicious business.

Crispy Black Bean Tacos with Cilantro Lime Sauce

Well HELLO there, little black bean crispies!

I will keep it quick so you can get to frying these up but mostly, FYI, bottom line, these are so-super-yummy. Also, pro-tip, you can call them crispy black bean tacos if you want – it’s technically what they are – but it’s a little more fun to call them black bean crispies which is what we’ve lovingly come to refer to them in our house.

Why Are These Black Bean Tacos SO GOOD?

Aside from the obvious reasons (golden crispy tortilla, super-satisfying black bean filling, brought together with a cool and creamy dipping sauce, gahh), this is one of my all-time favorite easy recipes because, well, it’s EASY. Like, stupid easy. Doesn’t get any easier than this:

  • Tortillas
  • Black Beans
  • Salsa
  • Taco Seasoning

Remember when we said the SOS recipes were not pretentious? And how we actually really celebrate short, low-key ingredient lists? That moment is now.

Can I Put Extras In My Black Bean Tacos?

Of course, you have options if you want to go above and beyond! Would a handful of delicious Mexican cheese tucked into that little black bean crispy be real nice? Yes, it would. As would some fajita veggies. As would some roasted chicken. And yes, if you want to make a cilantro lime dipping sauce, it is very doable and I included the directions for you and it will take you all of five minutes.

But if you’re short on… everything (and believe me, I pretty much LIVE in that house), I pinky promise that you can skip the add-ins. Black bean filling is super satisfying as-is, and it’s how I always eat these! Just plain.

Pro-tip: if time is tight, in place of the cilantro lime sauce, you can just mix some additional taco seasoning in with a little bowl of sour cream, and voilà. You have “seasoned sour cream” which, at least in my house, always goes over VERY well with the family dinner crowd.

Also, I have one more piece of good news that I would like to shout from the rooftops which is that YOU CAN FREEZE THESE!

One of my best black bean taco decisions ever was making a double batch, folding the black bean mixture in tortillas, and sticking a few of them into a bag in the freezer – and look at that! Fry those babies up when you’re ready to eat them, and you have a quick and easy lunch, dinner, or – yes – even a snack. This is the life I want to live.

How long does the Cilantro Lime Sauce stay good for as leftovers?

Sauce leftovers do best in the fridge for 3-4 days.

What kind of oil is best for the Cilantro Lime Sauce?

A neutral-tasting oil, something like canola oil, works well here. But usually I have olive oil on hand so that’s what I often use as well!

Can I meal prep these black bean tacos?

Sure! Make the filling and just keep it in the fridge for a couple of days. When you’re ready to eat the tacos, spread that filling into the tortillas and fry them up! Easy. OR, alternatively, you can freeze these little cuties! Spread the black bean filling into the tacos, fold them, and then freeze them BEFORE frying. When you’re ready to eat them, bring to room temp (15-30 seconds in the microwave will do it) and pop ’em back in your skillet till hot, golden, and crispy!

These vegetarian tacos have a deliciously satisfying black bean filling with fresh salsa and seasonings all tucked into a golden crispy tortilla and served alongside a cool and creamy cilantro lime sauce. YUM!


Ingredients

Crispy Black Bean Tacos

  • 1 (14 ounce) can of black beans, rinsed and drained
  • 1/4-ish cup of your favorite salsa
  • 1 tablespoon taco seasoning
  • small flour tortillas
  • olive oil or butter for frying

Cilantro Lime Sauce:

  • 1/4 cup oil
  • 1/4 cup water
  • 1/2 cup chopped green onions
  • 1/2 cup cilantro leaves
  • 2 cloves garlic
  • 1/2 teaspoon salt
  • juice of 2 limes
  • 1/2 cup sour cream (sub avocado to keep it dairy free / vegan)

Instructions

  1. Blend all ingredients in the cilantro lime sauce until smooth-ish. Set aside.
  2. In a food processor or chopper, blend the beans, salsa, and taco seasoning. Transfer to a skillet with a drizzle of oil and cook it up long enough to soften the flavors of the garlic and / or onions in the salsa. About 5 minutes is fine.
  3. Spread a few tablespoons of black bean filling into a flour tortilla. Fold in half. Repeat until the filling is used up (about 6-8 tacos).
  4. Heat some oil or butter in a skillet over medium heat. Fry in a skillet over medium heat, until crispy and golden brown. Dip in cilantro lime sauce. Serve with chips and salsa and a mid-week margarita. You’re welcome.

Your taco seasoning decision is an important one! They all have varying levels of salt as well as different spices that come through more or less depending on the blend. I am not too picky and will use any grocery store brand I can get my hands on, but one of my favorite next-level taco-seasoning-style blends is called Wow-a Chihuahua. It’s not salted, so you’ll just need to add salt to the recipe if you have a salt-free taco seasoning.

Same goes for the salsa – since there are so few ingredients, the brands you use really impact the end result in terms of flavor. My FAVORITE salsa is called Mateo’s – I can eat so much of this salsa (like, an unadvisable about), plus it’s great in recipes like this one. I like the medium one. I also really love all the Frontera salsas, which they sell at ALDI!

Pineapple Pork with Coconut Rice

Let’s tuck right into this comforting, super-satisfying bowl of yum. Immediately. Get your fork. Hurry, hurry.

I mean, sticky-sweet pork with that caramelized pan-fry goodness, the juicy chunks of pineapple, a handful of fresh herbs, slices of jalapeño, and crispy onions (yes, crispy onions! so underrated!) is all getting served over a hot pile of super luscious coconut rice, and WOW to the EEE. I hope you actually got your fork already because this is not a bad situation. Not at all.

The rich flavor, the caramelized texture, the totally indulgent and fragrant coconut rice… I mean, this is hands-down one of my favorite (easy! lifesaving! SOS!) meals of the season.

This Pineapple Pork Comes with a Short Ingredient List

Since this is part of our SOS series, I promised you a short, friendly ingredient list and this recipe will deliver. Here are your five major players for this bomb weeknight recipe:

  • pork
  • pineapple
  • teriyaki sauce – store bought, no guilt, SOS series FTW!
  • coconut milk
  • rice

Cilantro, jalapeños, crunchy onions are also obviously encouraged in bordlerline inappropriate quantities, but not required.

This recipe honestly feels like a gift that someone gives you at dinnertime and you get to unwrap it bite by bite, dinner by dinner, the next 2-3 days, or sadly, less, depending on how long your leftovers last. Which, in our house, was not long at all. A double batch would not be a bad idea.

It’s sticky, caramelized, comforting, and just a lil crunchy. I can’t quit it.

I don’t like pork. What can I use as a substitute?

Chicken would work well here or, for a vegetarian option, tofu would be great.

Is this spicy?

This dish has a lot of flavor, but it isn’t spicy. If you’re concerned about spice though, try omitting the jalapeños.

I have leftover crispy onions. What else can I use them for?

Pineapple Pork with Coconut Rice

Description

Sticky-sweet pork, juicy pineapple, fresh herbs, jalapeño, and crispy onions all served over a bed of fluffy coconut rice. SO GOOD!


Ingredients

Pork:

  • 1/2 cup teriyaki sauce (I like Soy Vay brand)
  • 1 pound thinly sliced pork tenderloin (you can buy this pre-cut at a lot of stores, sometimes labeled as “stir fry”)
  • 12 cups fresh pineapple chunks
  • olive oil for sautéing 

Rice:

  • one 14-ounce can full fat coconut milk
  • 1 1/2 cups water
  • 2 cups jasmine rice

Toppings:

  • cilantro
  • thinly sliced jalapeño
  • crunchy onions

Instructions

  1. Prep: Marinate the pork with 1/4 cup of the sauce for 2-3 hours, or a full day. This is low-key and low-stress. Just do it whenever you think of it.
  2. Rice: Add the rice ingredients to an Instant Pot. Cook on high pressure for 3 minutes, followed by a natural pressure release for 10-15 minutes (just let it sit there). Release the steam, fluff with a fork, season with a little salt, and attempt not to eat the whole thing.
  3. Pork: Heat a tablespoon of olive oil in a nonstick skillet or grill pan over medium high heat. Add *just* the pork – if you add all the sauce with it, it will steam the pork instead of caramelizing it. Leave the pork undisturbed in the hot pan for a few minutes at a time to get better caramelization. Throw the pineapple in there and let it get saucy and caramelized, too. Add a few additional tablespoons of sauce AFTER you’ve gotten it nice and brown.
  4. Serve: Top your luscious rice with a scoop of the saucy pineapple pork and finish with lime zest, cilantro, crunchy onions, and little slices of jalapeño.

Welcome to the SOS Series

Question for you.

What do you do when you need to make dinner, but…

…the dog won’t stop barking, and the baby won’t stop crying, and the toddler is driving you bonkers, and you’re super behind on work, and you haven’t showered since who knows when, and you just remembered your wet laundry is still in the washing machine from yesterday (ew), all your potted plants in the yard are still just sitting there dead from the winter and you just keep looking at them and being reminded of how low your standards have gotten, and you just… it’s just…

HOW DOES A PERSON DO THIS?

Welcome to the SOS Series, friends. My hope is that these easy, manageable, basic and delicious recipes are a lifeline for you as much as they have been for me over these last few weeks (months) as I’ve attempted to feed myself and my family fun, beautiful, and exciting food while surviving two kids 2-and-under during a global pandemic. Woof.

What Kind Of Recipes Will Be In This Series?

This series will feature 15 recipes that are made with 7 ingredients (not counting the pantry basics – olive oil, salt, etc.).

Some are vegetarian, some are extra-nutritious, some are Instant Pot-friendly, some are make-aheadable. But the one thing ALL 15 recipes have in common is minimal ingredient lists, short prep times, big flavor, and food j-o-y.

Also, importantly, ALL 15 recipes have my personal seal of approval as I have tested them in my own life (like, in my home kitchen, at 5:30pm) and filtered them through these two rigorous standards:

  1. Is this recipe easy enough to make with a toddler underfoot, a baby in the wrap, and a dog following me around, without completely losing my mind?
  2. Do I really love to eat this recipe?

Those are my two non-negotiables. If it’s a yes for both, then it’s in.

What’s So Great About Super Easy SOS-Style Recipes?

A few months ago, during the thick of my maternity leave, I found myself at the lowest of lows. Our toddler had just woken up from a nap and she wouldn’t stop crying because I was holding the baby. But every time I put the baby down to stop the toddler from crying, the baby would cry. So then I would pick the baby back up, which would lead to the toddler crying. And the high-pitched toddler crying (read: screaming) would be so intense that it would make the baby cry again. All three of us were at Stress Level 10. I get sweaty just thinking about it. It was a crying trap, and I was so stuck. I had no idea what to do to make it stop, so I picked up my phone and called Bjork.

He answered the phone, and I said, “Okay I know you’re working and I’m really sorry to bother you and all that, but this is an SOS moment. Both babies will not stop screaming and I can’t handle it right now. I really need you to come home.”

He came home, we got the tears to stop, and then guess what happened?

It was 5pm! Time to make dinner! Whee!

Sorry, but no. You can all eat crackers for dinner. This is just too hard. I don’t even have it that hard! and it’s still too hard.

That moment, that feeling of total desperation for some fast and easy wins that would help me feel not so completely out of control in my life, and my need to literally feed myself and my family something to avoid Meltdown Showdown 2.0?

That moment was the inspiration for this series.

Because, I thought, I can’t be the only one. There have to be more of us food-loving humans out there who:

  • Are very exhausted
  • Are hungry for some actually yummy food, I mean, as much as we love frozen veggie nuggets
  • Want recipe solutions that feel actually manageable right now.

What’s great about SOS recipes is that they are fun and inspiring, but not stressful. And they are certainly not pretentious. They are not afraid to take some help from store-bought and pre-made shortcuts. They will not clutter your kitchen with dishes to wash. And yet they are super delicious, and maybe even beautiful enough for a quick post to the gram? and they help you feel like it’s all going to be okay. They are in your corner, keeping your belly full and your tastebuds happy, setting you up for the small wins. And the small wins ARE the big wins. We got this.

This series is dedicated to all the working-late-nighters, the weary quarantiners, the overwhelmed mamas and daddies, the huge life transitioners, the exhausted caretakers, the barely-holding-it-togetherers for whatever reason it might be.
