January Meal Plan: Week 3

How are you feeling, you meal prep champ? Is your brain so excited to once again scroll through and just check off the decisions it doesn’t have to make for the week? Hooray, here they are, decisions made for you! Check and check.

And what a checklist it is, pals. A super thick, chewy, saucy udon noodle dish? Spicy punchy tacos with charred tortillas and crunchy cool slaw? Warm, cozy, tastes-like-all-day-but-only-took-an-hour soup? Oh man, yes yes yes ma’am.

Noodles AND tacos in the same week, you say. Lordy-loo, is it everyone’s birthday?! What a treat.

Recipes This Week

Meal 1: Black Pepper Stir Fried Udon

Listen, you are not going to be able to get enough of these noodles! It’s pretty much obsessive at this point over here on our end, so good luck. Yaki Udon is the Japanese name for these stir fried noodles that have stolen our takeout hearts, so we did our best to come up with a very weeknight dinner-friendly (thank you pre-cooked udon and frozen stir fry veg!), homemade version of these beautifully chewy, sticky, saucy, peppery, caramelizey, twirl-and-chomp-forever noodles.

Add protein! Some crispy tofu or pan-fried shrimp would be perfect.

Meal 2: Spicy Shrimp Tacos with Garlic Cilantro Lime Slaw

No such thing as an unhealthy obsession with tacos in our book! Especially spicy shrimp tacos because, come on, warm corn tortillas stuffed with heavily spiced skillet shrimp tucked up in some smashed avocado and a creamy cilantro lime slaw? Oh sorry, did someone say salty cotija cheese, a lime squeezer, and oh no, of course, more sauce on top?! HOW CAN YOU NOT BE IN LOVE.

Make it little-kid friendly! Go a bit lighter on the spice seasoning depending on what your kiddo(s) can handle. Serving the tacos deconstructed can also be a nice way for littles to try each part of this separately.

Meal 3: Instant Pot Wild Rice Soup

It’s like a moral obligation once the temperatures are so very bitter cold here in Minnesota that we remind you, “Oh hey, we love wild rice soup and you should too!”. And this version is no exception so we’re popping it in the meal plan. We ditched the chicken and swapped for mushrooms (please just trust and cut them real small if you’re ishy about them). Simple, warm, creamy, earthy, and ready in an hour.

If you prep the fresh mushrooms as directed in the prep guide, be sure to use these veggies up within the first few days so the mushrooms stay fresh! They should last 2 days in the fridge if they are dried and cleaned well (not overly wet). Alternatively, you can throw in a bag of frozen mushrooms and skip the mushroom prep altogether.

Add protein! Some shredded chicken would be a very excellent decision.

Excited to whip up another batch of energy bites for this week’s brekkies and snackers again? Yay us tooo! We have absolutely fallen in love and so we’re excited for you to spend some time with this current heartthrob. Chewy, sweet, so easy to put together…they really are such a special little treat.

Kimchi Grilled Cheese

We are nothing if not great adventurers and when it comes to “find more delicious things to put in grilled cheese”, well, friends…that is an adventure we’re always willing to take.

Thick, crispy, golden brown pan-grilled slices of sourdough. The meltiest of melty cheeses, two kinds because we mean it. An exquisitely caramelized, smoky spicy-sweet, almost jammy kimchi and bacon filling. Lordy loo, an adventure awaits you too!

And if you’re like, “you really missed an opportunity here not calling this “Grilled Kimchi-se”…you’re not wrong.

But let’s get this bad boy on your table, shall we?

Ingredients For This Grilled Cheese

The beauty of grilled cheese is definitely the whole “only takes bread/butter/cheese” thing, but when you want to glam up a sammy, we’ll need just a few other things, but not many. Still pretty dang simple!

  • sourdough
  • American (so melty!) and gruyere cheeses
  • butter (or mayo if you go that route with your grilled cheese-ing)
  • kimchi
  • bacon
  • brown sugar

If you’re not familiar with kimchi, it is a traditional Korean staple dish of spicy fermented cabbage and other vegetables. It has deep ancestral roots in Korean culture and originated thousands of years ago as a way to preserve vegetables during the cold winter months. The prep has changed over time and there are many varieties with different ingredients/flavors/spice level, depending on the region it is made in, but no matter what, it is found on nearly every table and remains to this day an important source of pride in Korean culture.

Let’s Make The Best Kimchi Grilled Cheese Sandwich

Kimchi on its own will be a little watery, so the key here is to sauté it first with the bacon and a little brown sugar so it gets kind of caramelized and becomes sort of jammy. That’s right, JAMMY. The spicy flavors of the kimchi mixed with the smoky bacon and the speckle of sweet from the brown sugar? So good. So perfect for sandwich filling.

Here’s how we do it:

  1. Cook the bacon until it is crisp. Add the kimchi and brown sugar and let it pan fry, undisturbed, for a few minutes to help dry it out and become caramelized. Transfer that to a bowl.
  2. Get your sandwich stacks ready. Bread, gruyere, kimchi mixture, American cheese, bread. Butter (or mayo!) both sides to prepare for crisping.
  3. Heat that same pan over medium low. Lower and slower is better here for optimal cheese meltiness and golden brown perfection!
  4. Get ready to fall in love.

Let’s Discuss The Cheese

Okay, cheese stuff. As you know, always an important topic. Now, before you dismiss it, we really do think American cheese is essential here for its highly distinguished melt factor. It’s just classic grilled cheese 101, and we really don’t want to mess with it. Gruyere also melts really well and for us, it was just another flavor we love. We also have done cheddar on this and it was great, too.

Honestly, we feel like you probably can’t go wrong, but we really really recommend keeping the American, regardless of what other kind of cheese you use, just so you get some of that dreamy silky meltiness.

Sides To Serve

If we’re being honest here, we’d just serve it with a side of ANOTHER kimchi grilled cheese…but there are other things that would work great, too. You could do this simple green salad or maybe a smoother soup like this lush tomato soup or the bright, comforting and delicious golden soup.

But also, we’re pretty serious about just a second sandwich as a side. What an absolute dream. Grilled Kimchi-se forever.

Can I omit the bacon to make it vegetarian?

Absolutely!

Can I try other kinds of cheeses here?

You can kinda play around with what you like, but we recommend keeping at least one of the cheeses as American cheese for its meltiness.

More sandwiches, of course! May we also suggest our Kimchi Fried Rice or piling high kimchi on these tacos?

Kimchi Grilled Cheese

Description

Golden brown, pan-fried Kimchi Grilled Cheese is on the menu! Melty cheese with a caramelized kimchi and bacon filling sit between two thick slices of sourdough bread. Yum, friends. YUM! 


Ingredients

Units

Pan-Fried Kimchi:

  • 2 cups kimchi, chopped (personal preference – you can leave it unchopped too)
  • 6 slices bacon, chopped
  • 2 tablespoons brown sugar
  • black pepper to taste

Grilled Cheese:

  • sliced sourdough bread
  • American cheese
  • Gruyere cheese
  • butter or mayo

Instructions

  1. Cook the bacon in a large pan over medium high heat until crisped and fat is rendered. Add the kimchi to the pan with the brown sugar. Pan fry for a few minutes, leaving it undisturbed for a few minutes at a time so it dries out and gets a little bit caramelized. Season with black pepper. Transfer to a bowl and wipe the pan clean.
  2. Layer your sandwiches: a slice of sourdough, gruyere cheese, kimchi mixture, American cheese, and a second slice of sourdough. Spread butter or mayo over the top and bottom of the sandwich.
  3. Heat the same skillet to medium heat; add the sandwich and cook for a few minutes on each side until golden brown. Cut and serve. Magic.

Notes

You usually don’t want to use high heat here because the sandwich will burn while the cheese remains un-melted. Medium or low heat will allow the sandwich to stay on the heat longer, which will melt the cheese and give you a golden brown exterior.

I usually use about 1/4 cup of the kimchi mixture per sandwich. If you have some unused kimchi mixture, just store it in the fridge to add to sandwiches throughout the week.

January Meal Plan: Week 2

Okay yes, we’re here, you’re here, we’re all making stuff. It’s happeniiiiiiing! Off to the races with another week of meal plan/prep and we don’t want to get anyone too excited, but there are fries involved. DREAMS REALLY DO COME TRUE.

This week is full of nourishing and seriously yum ideas for you that include the most smoky-sweet tender salmon, an easy as all get out but deep and deliciously warming green curry, and let us not forget the stunning little wholesome-bombs that are apple muffins comin’ atcha.

Recipes This Week

Meal 1: Avocado Kale Caesar with Sweet Potato Fries

Attention everyone, it’s time for an all-star kale drench! You know the one. Where you douse that power green with a creamy avocado-based Caesar dressing that is absolutely void of anchovy but brimming with zing. Throw in your other salad faves and then toss some crispy, oven-fresh, absolutely stunning sweet potato fries on the side like a true hero.

Make it little-kid friendly! Serve it deconstructed (avocado, sweet potato, small pieces of massaged kale), and let kiddos try dipping things in dressing.

Add protein! Add a can of drained and rinsed chickpeas, sautéed shrimp, or shredded rotisserie chicken.

Meal 2: BBQ Salmon with Mango Avocado Salsa

Some folks have called this “gateway salmon” and that is a very accurate description! If you’re a skeptic, this crisp smoky-sweet preparation is so surprising and delicious it might just change your mind. And if you can get a fresh mango chopped up for a sweet limey mango salsa on top of this bowl, you def won’t be stopping with this salmon anytime soon. (Frozen mango and salmon will both work great too, so don’t let anything stop you!)

Meal 3: 5-Ingredient Green Curry

Only five ingredients and you’re wrapped in a cozy food blanket that you made so easily and it’s just so delicious and warming and okay, this metaphor got away from us but…this green curry is top-notch! Some curry paste and a can of coconut milk and you are definitely in business. This vegetarian delight is totally customizable to meet you wherever you and your fridge/pantry are at.

Make it little-kid friendly! Make sure to buy a green curry paste that is mild, or add just a little at a time to make sure the sauce isn’t too spicy.

Swap protein! Replace the tofu with cooked shrimp or rotisserie chicken.

Snack / Breakfast: Feel-Good Apple Muffins

An apple a day keeps the doctor away, but TWO apples all shredded up with a few other wholesome ingredients keep you living the Apple Muffin dream and that is arguably more life-giving. Perfect for a quick breakfast this week or just a wholesome snacker whenever you need it. Cozy, dense, warm cinnamony goodness. Breathe it in.

Helping us all put something lovely and nourishing and green on the table each day with extremely minimal effort thank you so muuuuch. The delicious mapley balsamic vinaigrette gets shook up in a jar and then left in the fridge to dress up a handful of lush spring greens any old time. Could you add some grilled chicken, chunky croutons, other delicious veg to this salad to bulk it up as a full meal? Yes, of course. Could you also just eat the lightly dressed greens as a side, even at brunch? Also yes. This one is great any time of day!

Millionaire Gnocchi (Red Sauce, Herbed Ricotta, and Golden Crispies)

Alert alert alert — the coziest, rich, deeply comforting, easy meets decadent, saucy, stunning, ding dang TREASURE of a dish is here for you.

Soft pillowy gnocchi swimming in a delicious and easy red sauce speckled with Italian sausage, dollops of zesty herbed ricotta melting into each creamy bite, surprise little crunches from the savory golden brown breadcrumbs you sprinkled on top. Wowowowowowow, we cannot get enough of this one.

There are a few extra steps involved to make each separate piece come together, but once they’re all in the same place at the same time, you will not regret one single extra chop or stir it took to make this darling happen. You’ll have to make your crispies (or perhaps you already have a jar made in your fridge because they are your new best friend?), you can mix together the herby ricotta while the sauce is simmering, the gnocchi is prepackaged but, hey, if you’re really feeling it this evening, you could also make your own!

Point being, shortcuts or not, this one is special and we think you’re going to love it.

Ingredients You’ll Need To Bring This To Life

The ingredient list for each separate part of this masterpiece is pretty simple and the lovely thing about that ricotta and those crispies is that they are simply dying to be plopped and sprinkled on other things so, make ’em here and have them ready for some other delicious fun this week.

For the gnocchi, you’ll need:

  • Italian sausage
  • can of whole peeled tomatoes
  • onion, garlic, oregano
  • pre-packaged gnocchi

For the love of your life herbed ricotta & golden crispies:

  • ricotta
  • garlic
  • chives, parsley, thyme, rosemary and sage
  • lemon zest
  • panko breadcrumbs
  • pre-packaged crunchy fried onions
  • olive oil, salt & garlic powder

Get them all together and then let them party. Like, it will really be a party. Get ready.

How To Make This Incredible Gnocchi

Like we said, a few separate elements to bring this superstar combo together but pretty easy peasy to make it happen.

  1. Get your sauce going. Brown the sausage and break it up in the pan. Saute the onions, garlic, herbs and a can of crushed tomatoes. Get the sausage back in there and give her a lazy simmer for a bit on low!
  2. Make the ricotta. Mix together ricotta, garlic, lemon zest, and minced herbs to taste. Boom bam! Try not eat it all with a spoon before you get to your gnocchi.
  3. Make your golden crispies! Check out this post for more detail, but you’ll want to toast up some panko breadcrumbs with olive oil and herbs, mix in some crispy onions, and then just get ready to joyously crunch on them all the days of your life.
  4. Cook gnocchi. Prepare according to package instructions (or maybe you’ve made your own – wow, you!) and then add them to the simmering sauce to get them all coated and delicious.
  5. Dish, dollop, sprinkle & serve! You get it. Train’s headed to YumTown.

What a dream. WHAT A DREAM. Just, very excited for you to work this into your life.

Fill Out That Dinner Table

It’s fair if you just want to put this all in one giant bowl and have at it but if you MUST share with other people around your dinner table, it’s nice to round out the meal with a little simple green salad (why not sprinkle some crispies on that as well?), maybe a lovely warm hunk of no-knead bread, a small extra side bowl of that herbed ricotta?

However you’re serving it up, small dinner party with friends, a cozy night in for two, or maybe your toddler has very delicious and specific meal demands, this one is worth it.

Description

You’re going to feel like a million bucks when eating this delicious Millionnaire Gnocchi! Pillowy gnocchi, melty herbed ricotta, fresh herbs, and surprise little crunches from the savory golden brown breadcrumbs you sprinkled on top. 


Ingredients

Units

Red Sauce

  • 1 pound ground Italian sausage or meatless alternative
  • 12 tablespoons extra-virgin olive oil
  • 1 medium yellow onion, minced
  • 2 large cloves garlic, minced
  • one 28-ounce can crushed tomatoes
  • 1 teaspoon dried oregano
  • salt and red pepper flakes to taste

Herbed Ricotta

  • 68 ounces of ricotta cheese
  • 1 small clove garlic, grated
  • zest and juice of 1 lemon
  • salt to taste
  • minced herbs to taste (chives, parsley, and/or thyme)

Gnocchi

  • two 16-ounce packages pre-cooked gnocchi

Golden Crispies (Breadcrumbs)


Instructions

  1. Brown the sausage: Heat a large skillet over high heat. Add the sausage; break apart until well-browned and fully cooked. Remove sausage from the pan. If you want you can drain off excess grease from the pan (I often keep it for extra flavor). 
  2. Simmer the sauce: Turn the heat down (so you don’t burn the garlic). Add the olive oil, onion, and garlic; sauté for a few minutes over medium low heat until fragrant. Add the tomatoes and oregano. Add sausage back in and simmer over low heat (think of it as a “lazy” simmer) for 30-45 minutes. Taste and season with salt and red pepper flakes.
  3. Make the ricotta: While the sauce is simmering, mix the ricotta ingredients in a small dish. Taste and adjust as you like.
  4. Cook the gnocchi: Cook gnocchi according to package directions (usually this involves a short boil). Add cooked gnocchi to the pan with the sauce. Bring to a low simmer to get the gnocchi and sauce bubbling and well-coated.
  5. Serve: Serve hot gnocchi topped with a dollop of herbed ricotta and a generous sprinkling of golden crispies. ✨ Heck to the yes.

Notes

If you don’t need a full 6-person batch of this gnocchi, just make one package of gnocchi with half of the tomato sauce, and freeze the other half of the sauce for later!

Golden Crispies (AKA the Most Fabulous Breadcrumbs You’ll Ever Make)

It’s possible you might be like….”do I….do I need a recipe for breadcrumbs?” and that answer is: you have no idea how much you need this.

Get ready to find yourself sprinkling these magnificent crispies on every single meal from here on out.

Need a little extra textural somethin’ somethin’ on top of some pasta? These are perfect. Some crunch in your salad but not looking for big hunky croutons? Yep yep. Thinking about sprinkling those on top of a beautifully baked or grilled fish? Ding ding, what a win!

Have we been known to eat these perfectly golden, exquisitely crisped and herby breadcrumbs in a bowl like cereal? YES. SEVERAL TIMES. We cannot be stopped and we will not stop you, and oh my let’s get to it because we want you to already have these in your life.

All You Need For These Breadcrumbs

When testing these in the kitchen, we originally started with Samin Nosrat’s Herby Fried Shallot and Breadcrumb Crunch recipe, which has an amazingly beautiful depth of flavor and is definitely cereal-bowl worthy, but we wanted to make things a little quicker/easier. We had to better align our need for savory, olive oil-drenched crunch-bursts of joy all day every day….with what real days actually look like for us. So, we SOS-ed them up a bit and swapped out some ingredients and prep.

The needs list is pretty short:

  • panko breadcrumbs
  • fresh rosemary, thyme, parsley, and sage leaves
  • pre-packaged crunchy fried onions
  • olive oil, salt & garlic powder

How To Make These Golden Crispies

If you have the time to fry up your own shallots and make your own breadcrumbs, Samin’s recipe is worth the journey. If you’re feeling our need to be cradled in the gentle soothing arms of quick and easy recipes as you stumble into this new year, then definitely give these a go and get ’em in a jar for all your crunchy topping needs.

  1. Sizzle up your rosemary and sage leaves in oil. Once they’re fried crisp, pull them out and let them drain on a paper towel.
  2. Add panko to the hot oil and heat until golden & crispy.
  3. Transfer breadcrumbs to a bowl, stir in crunchy onions, and crumble in fried rosemary and sage leaves.
  4. Stir in fresh herbs, garlic powder and salt, and HELLO, YOU’RE IN BUSINESS.

If you’re feeling like you can be out of those cradle arms for just a little extra time, we do include a frying-your-own shallots version in the recipe card if you wanna work that into your repertoire at some point. Because you will now be making these always.

How To Use These Breadcrumbs

We absolutely need you to be ready and have these on hand for a pillowy, saucy, rich and wonderful gnocchi recipe coming your way very soon; these are an absolute CROWN on top. But we really have been sprinkling these on just about anything. Golden Crispies (AKA Fabulous Breadcrumbs)

Description

The most magnificent Golden Crispies for all the internet to enjoy! Panko breadcrumbs, crunchy fried onions, fresh herbs, and a bit of seasoning and these crunchy breadcrumbs are ready to grace just about any dish. 


Ingredients

  • 1/4 cup oil
  • 4 sage leaves
  • 3 sprigs of fresh rosemary
  • 2 cups panko breadcrumbs
  • 3/4 cup crunchy fried onions, crushed
  • 1 tablespoon chopped fresh Italian parsley
  • 1 teaspoon chopped fresh thyme
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt

Instructions

  1. Heat the oil in a skillet over medium heat. 
  2. Add the sage and rosemary sprigs to the oil. The leaves should sizzle once they hit the oil. Fry for 1-2 minutes. Then transfer to a plate lined with paper towel.
  3. Next, add the breadcrumbs to the skillet and cook for a few minutes, stirring frequently, until golden brown and toasty. 
  4. Add the breadcrumbs to a bowl. Stir in the crunchy fried onions.
  5. Remove the rosemary leaves from the stem. Then, crumble the rosemary and sage with your fingers and add it to the breadcrumb mixture. 
  6. Add in the parsley, thyme, garlic powder and salt and give everything a stir.
  7. Sprinkle on pasta dishes, salads, soups, or any dish that could use a crispy, crunchy topping.

Notes

When testing this recipe, we originally made a version with homemade fried shallots instead of the pre-packaged crunchy fried onions (that’s what you’ll see in the photo, and that’s how Samin does it). If you’d like to fry your own shallots, thinly slice 4 shallots. Heat 1/2 cup oil in a skillet, and add the shallots to the oil. Fry the shallots until golden brown. We recommend doing this in 2 batches. Then, remove from the shallots with a slotted spoon and transfer to a sheet pan or plate lined with paper towel. For the final version we went with the store-bought onions because we thought it tasted just as good and took much less time.
