Instant Pot Pasta and Meatballs with Lemon Herb Ricotta

This is quite possibly the most SOS recipe that there ever was, and it has a real cute name in our house: Spaghetti Bites.

The normal name for this would be “Instant Pot Pasta and Meatballs” but considering that this resembles actual spaghetti and meatballs, and that it also reminds me of a big bowl of spaghetti-O’s, and given the fact that I have a two-year-old and a four-year-old in the house, it’s going to be hard for me not to call these Spaghetti Bites.

This whole combination is like a hug in food form: little boingy bites of pasta, tender meatballs, caramelizey tomato sauce (it almost browns a bit on the bottom of the IP). And things even get a tiny little bit blingy when you load it up with some herbed lemon ricotta which packs some fresh garlic in there, and everything else good in your pantry – salt, pepper, basil, olive oil – gets flashy up on top. Sweatpants, fork, deepest pasta bowl, let’s go.

Does It Have To Be Made In The Instant Pot?

Nope! Just cook it like regular pasta, and then add the pasta to your sauce and meatballs. You do not need a recipe for it, I promise 🙂 but you can look to the notes section of the recipe if you want more on that.

Personally, I like to use the Instant Pot for this pasta for a few reasons: the pasta cooks in the tomato sauce, making it a little extra starchy and thick, and it almost caramelizes the tomato sauce on the bottom of the pan. The meatballs get super tender from a quick pressure cook, the pasta cooks up nice and springy without getting mushy, and the whole thing only leaves you with one dish to wash.

What Type Of Pasta To Use For This

If you’re asking me, a random mom in Minnesota with a food blog, I think the most fun pasta to use for this is ditalini. It’s a small tubular shape that is like a miniature rigatoni. And I said it before, but even though the pasta shape is not rounded, it does kind of transport you straight back to a retro kitchen with a big bowl spaghetti-O’s in front of you.

The ditalini I have is DeLallo brand but I’ve seen other brands at Kowalski’s and other stores here in the Twin Cities. The beauty of the DeLallo brand ditalini (not sponsored) is that they have little ridges in them, and that is just a really lovely thing to chomp on when you’re hungry after a long day and just having an SOS dinner moment. It’s the details, ya know? Like the extra ridges on your ditalini. Who knew.

Ways To Customize This

There are a million and one. Some ideas that just scratch the surface:

  • Use a homemade or storebought spicy tomato sauce, like arrabiata.
  • Add olives, anchovies, or capers to the tomato sauce to make it more of a puttanesca.
  • Blend your sauce with cashews and red peppers to make it a red pepper sauce, like this one.
  • Use storebought meatballs, sliced chicken sausage, ground beef or sausage, or add a can of white beans for a veg alternative.

Things To Know About “The Creamy Element”

I am calling the topping for this Instant Pot pasta and meatballs your “creamy element” – and it really can be kind of anything, it’s just something to make the whole thing creamy, garlicky, and bright.

As written, straight out of the Instant Pot, the pasta is heavy and savory – it’s the contrast with the creaminess and the bite of fresh garlic, the freshness of herbs, and the zing of lemony zest and juice that brings this whole thing to the level of being worth writing a blog post about.

What you can use for the base of the creamy element:

  • mascarpone cheese (creamy, buttery, dense, and melty)
  • ricotta cheese (easier to find, a bit less melty, but reminiscent of lasagna which is a good thing)
  • garlic herb spreadable cheese like Alouette and Boursin (extra good for SOS moments – the Alouette brand has little flecks of fresh garlic in there, and a bunch of dried herbs, so I just grate some lemon zest in and it’s good to go)

How To Add More Vegetables To This

You could take three approaches here – one would be to add veggies directly to this dish and cook them into the sauce. Just chop and sauté some veggies (minced carrots, peppers, mushrooms, etc.) at the beginning of the cooking process, and just add your meatballs and sauce to that. The whole thing only cooks for 3 minutes so you don’t run too much of a risk of overcooking the veggies.

The second would be to do my favorite add-veggies-to-pasta-dish hack and just stir in some fresh spinach or frozen peas into the cooked pasta at the end.

And the third approach, which is what I’d probably do personally, would be to leave this recipe as-is and just add a little side situation to get your veggies in. If we’re talking about a whole meal here, this is nice because it gives you something else to eat that will vary the texture, color, etc. on your dinner plate. Rounds the whole thing out, right?

I’d recommend Liz’s roasted broccoli if you have a little more time (SO GOOD), house favorite brussels sprouts for if you have medium amount of time, or a simple green salad if you have minimal time. My girls love all of these but especially that simple green salad! We make it all the time and it’s the perfect super fast salad that gets some tender little greens on the plate and in the bellies.

Who knew there could be so much to say about the most basic Instant Pot pasta and meatballs recipe? (Or, as we say, Spaghetti Bites?)

This is a back pocket winner that is the realest definition of SOS cooking. Saucy pasta, savory meatballs, and a creamy dollop on top. Dinner = done!

Can I make this on the stovetop?

Absolutely! Just cook the pasta as directed. Add the meatballs and sauce to another skillet; add cooked pasta and combine (you likely won’t need any broth). You’re good to go.

Can I make this in a slow cooker?

We haven’t tested this in a slow cooker, but it sure sounds like it’s possible! If you give it a try, drop a comment and let us know how it turns out.

How can I make this vegetarian?

An easy, yummy swap for the meatballs would be to use white beans instead!

Ingredients

Pasta and Meatballs

  • some frozen chicken meatballs (or other pre-made meatballs) – about 2 cups is plenty
  • 1 jar of your favorite tomato pasta sauce
  • 1 cup chicken broth
  • 1 1/2 cups small pasta – I like to use ditalini
  • salt and pepper to taste
  • a little olive oil (if the sauce doesn’t have much oil it in)

Herbed Lemon Ricotta

  • 1 pound fresh ricotta – mascarpone is a bit more creamy / melty and also delicious!
  • juice of 1 lemon + a little bit of zest
  • 1 garlic clove, finely grated
  • 1/4 cup olive oil
  • 1 cup finely chopped mixed chives, parsley, basil
  • salt and pepper to taste

Instructions

  1. Place meatballs and sauce in the Instant Pot; sauté for a couple minutes till it’s hot and bubbly. 
  2. Add pasta and chicken broth; stir and cook on high pressure for 3 minutes. 
  3. Release steam right away (so your pasta doesn’t overcook and get mushy). Stir to incorporate. Mine usually sticks to the bottom a little bit but with a few stirs it will lift up and come together perfectly. 
  4. Mix your herbed ricotta ingredients together.
  5. Serve the hot pasta in bowls with dollops of the ricotta over the top. Mwah!

Notes

Stovetop instructions: Just cook the pasta as directed. Add the meatballs and sauce to another skillet; add cooked pasta and combine (you likely won’t need any broth). You’re good to go.

An amazing shortcut for the herbed lemon ricotta is garlic and herb spreadable cheese like Boursin or Alouette! I like to add lemon zest to those shortcuts too just so you get the nice lemony flavor in there.

Sometimes the bottom of the Instant Pot gets a little stuck with the meatballs or tomato sauce, but I have never had it burn. I also find that the browning on the bottom adds some flavor! As long as you have the broth in there you should be good to go with burning. When in doubt you can always add a bit more broth!

Tofu and Brown Rice Lettuce Wraps with Peanut Sauce

How much do I love a quick pan-fried crumbled tofu and brown rice filling, coated in peanut sauce, tucked into tender little butter lettuce leaves, and crowned with a drizzle of spicy mayo and – obviously – a couple little crunchy fried onions? Judging by the tens (hundreds?) of these that I’ve eaten, the answer is: A LOT.

There’s just something about these flavors and textures that makes a person feel good in their heart. It’s light but it’s filling, it’s savory but a little sweet and spicy, it has a complexity of texture with a delicate, fresh crunch and an almost-meaty-like filling, and it comes together so ridiculously fast – I mean, let’s just go ahead and accept right now that this is a recipe that cannot be made just once.

This recipe has absolutely been our most-made meal of the summer.

Our Short and Sweet Ingredient List

  • tofu
  • lettuce
  • brown rice
  • sriracha
  • teriyaki sauce
  • orange
  • peanut butter

If you like a little spicy mayo on top (and I do, thank you very much) then grab your mayo and sriracha out of the fridge, and if you like a little crunchy onion action (also yes) pull those out of the pantry.

And there you go: saucy, peanutty, flavor-packed tofu and brown rice lettuce wraps, coming right up.

What I Love About These Lettuce Wraps

There’s just so much to tell!

  • Most lettuce wraps leave me wanting more, I think because they lack a carb element. Having brown rice (or quinoa, or another grain) in the filling solves this problem and makes them super satisfying in a full-meal kind of way.
  • The tofu is just so low maintenance. Give it a quick squeeze over the sink and then plop it in the skillet and crumble it up. SOS-style.
  • The peanut sauce is semi-homemade, using a bottle of teriyaki to start you off. If you wanted to make your own peanut sauce, this is my go-to. I’ve done it both ways and it’s great no matter how you choose to peanut sauce it.
  • It makes great leftovers! The filling lasts for days, and it can be used in your extra lettuce leaves or over a salad or in a stir fry… endless options.
  • It’s family-approved! At least in my house it is: my husband raves every time I make these and my toddler gets *so* excited for what we’ve come to call “lettuce wrap night.” We put yogurt on hers instead of spicy mayo, and she will eat 2, 3, sometimes even 4 of these. 😂 You just never know with these little people.

This recipe has landed on our table so many times in the last 6 months and it is just everything I love in life: creamy, salty, saucy, spicy, a little bit sweet, and light, crunchy, and filling. Not to mention SOS-level easy.

This looks so good! Tell me! How do I level these up?

Fresh garlic, scallions, or ginger are great additions to your filling mixture. And obviously homemade peanut sauce is fab (love, love, love this one). Go with whatever works! This recipe is meant to be flexible and easy.

How can I make these totally vegan?

Only swap you’ll need to make is using a plant-based mayo!

How long will filling leftovers keep in the fridge?

3-5 days is ideal here for leftovers.

How could I add meat to this?

The easiest sub would be to use ground chicken or turkey instead of tofu!

These lettuce wraps are ridiculously good! Crunchy, fresh, and packed with tofu, brown rice, crispy onions, plus a drizzle of peanut sauce and spicy mayo. Delicious!


Ingredients

Lettuce Wraps

  • olive oil
  • One 14-ounce block extra firm tofuminimally pressed to remove water
  • about 2 cups cooked brown rice and/or quinoa or other grains – I use the 8.5 ounce precooked packages so it’s very, very easy
  • butter lettuce or leaf lettuce for wrapping
  • spicy mayo (see notes)
  • chopped peanuts or crispy onions for topping

SOS Peanut Sauce

  • 1/2 cup teriyaki sauce
  • juice of 1 orange
  • 1/4 cup peanut butter
  • a squirt of Sriracha or other chile sauce if you want

If you have a bit more time, you can also use this amazing homemade peanut sauce.


Instructions

  1. Cook the tofu: Heat a few swishes of oil in a nonstick skillet over medium high heat. Add the tofu and crumble in the pan. Cook until slightly browned. While that’s cooking, whisk up all sauce ingredients in a bowl.
  2. Add rice and sauce: Add the rice and most of the sauce to the pan. Sauté for 5 minutes or so – just enough to get some browning / light caramelization and get everything nice and yummy. Season with salt to taste.
  3. Fill and serve: Spoon your tofu and brown rice filling into crispy little pieces of lettuce. Top with something crunchy (peanuts? crispy onions?) and something creamy (spicy mayo all the way) and drizzle with a little extra sauce, and now tell me this isn’t your favorite meal of the week.

Notes

Spicy Mayo: I usually just mix about 1/4 cup mayo with about 1 tablespoon sriracha. But super easy to make it more or less spicy depending on your heat tolerance!

Well HELLO there, little black bean crispies!

I will keep it quick so you can get to frying these up but mostly, FYI, bottom line, these are so-super-yummy. Also, pro-tip, you can call them crispy black bean tacos if you want – it’s technically what they are – but it’s a little more fun to call them black bean crispies which is what we’ve lovingly come to refer to them in our house.

What’s In These Black Bean Tacos

Aside from the obvious reasons (golden crispy tortilla, super-satisfying black bean filling, brought together with a cool and creamy dipping sauce, gahh), this is one of my all-time favorite easy recipes because, well, it’s EASY. Like, stupid easy. Doesn’t get any easier than this:

  • Tortillas
  • Black Beans
  • Salsa
  • Taco Seasoning

That’s it! And if you want to be extra, a creamy cilantro lime sauce for dipping.

Remember when we said the SOS recipes were not pretentious? And how we actually really celebrate short, low-key ingredient lists? That moment is now.

Can I Put Extras In My Black Bean Tacos?

Of course, you have options if you want to go above and beyond! Would a handful of delicious Mexican cheese tucked into that little black bean crispy be real nice? Yes, it would. As would some fajita veggies. As would some roasted chicken. And yes, if you want to make a cilantro lime dipping sauce, it is very doable and I included the directions for you and it will take you all of five minutes.

But if you’re short on… everything (and believe me, I pretty much LIVE in that house), I pinky promise that you can skip the add-ins. Black bean filling is super satisfying as-is, and it’s how I always eat these! Just plain.

Pro-tip: if time is tight, in place of the cilantro lime sauce, you can just mix some additional taco seasoning in with a little bowl of sour cream, and voilà. You have “seasoned sour cream” which, at least in my house, always goes over VERY well with the family dinner crowd.

How To Freeze These Black Bean Tacos

I have one more piece of good news that I would like to shout from the rooftops which is that YOU CAN FREEZE THESE!

One of my best black bean taco decisions ever was making a double batch, folding the black bean mixture in tortillas, and sticking a few of them into a bag in the freezer – and look at that! Fry those babies up when you’re ready to eat them, and you have a quick and easy lunch, dinner, or – yes – even a snack. This is the life I want to live.

How long does the Cilantro Lime Sauce stay good for as leftovers?

Sauce leftovers do best in the fridge for 3-4 days.

What kind of oil is best for the Cilantro Lime Sauce?

A neutral-tasting oil, something like canola oil, works well here. But usually I have olive oil on hand so that’s what I often use as well!

Can I meal prep these black bean tacos?

Sure! Make the filling and just keep it in the fridge for a couple of days. When you’re ready to eat the tacos, spread that filling into the tortillas and fry them up! Easy. OR, alternatively, you can freeze these little cuties! Spread the black bean filling into the tacos, fold them, and then freeze them BEFORE frying. When you’re ready to eat them, bring to room temp (15-30 seconds in the microwave will do it) and pop ’em back in your skillet till hot, golden, and crispy!

These vegetarian tacos have a deliciously satisfying black bean filling with fresh salsa and seasonings all tucked into a golden crispy tortilla and served alongside a cool and creamy cilantro lime sauce. YUM!


Ingredients

Crispy Black Bean Tacos

  • 1 (14 ounce) can of black beans, rinsed and drained
  • 1/4-ish cup of your favorite salsa
  • 1 tablespoon taco seasoning
  • small flour tortillas
  • olive oil or butter for frying

Cilantro Lime Sauce:

  • 1/4 cup oil
  • 1/4 cup water
  • 1/2 cup chopped green onions
  • 1/2 cup cilantro leaves
  • 2 cloves garlic
  • 1/2 teaspoon salt
  • juice of 2 limes
  • 1/2 cup sour cream (sub avocado to keep it dairy free / vegan)

Instructions

  1. Blend all ingredients in the cilantro lime sauce until smooth-ish. Set aside.
  2. In a food processor or chopper, blend the beans, salsa, and taco seasoning. Transfer to a skillet with a drizzle of oil and cook it up long enough to soften the flavors of the garlic and / or onions in the salsa. About 5 minutes is fine.
  3. Spread a few tablespoons of black bean filling into a flour tortilla. Fold in half. Repeat until the filling is used up (about 6-8 tacos).
  4. Heat some oil or butter in a skillet over medium heat. Fry in a skillet over medium heat, until crispy and golden brown. Dip in cilantro lime sauce. Serve with chips and salsa and a mid-week margarita. You’re welcome.

Notes

Your taco seasoning decision is an important one! They all have varying levels of salt as well as different spices that come through more or less depending on the blend. I am not too picky and will use any grocery store brand I can get my hands on, but one of my favorite next-level taco-seasoning-style blends is called Wow-a Chihuahua. It’s not salted, so you’ll just need to add salt to the recipe if you have a salt-free taco seasoning.

Same goes for the salsa – since there are so few ingredients, the brands you use really impact the end result in terms of flavor. My FAVORITE salsa is called Mateo’s – I can eat so much of this salsa (like, an unadvisable about), plus it’s great in recipes like this one. I like the medium one. I also really love all the Frontera salsas, which they sell at ALDI!
