It’s a Snack, It’s a Breakfast… We Love Them.

A few months ago I saw a video from Dini at Prep and Rally where she took an almond flour tortilla and basically gave it the French Toast Treatment!

The tortilla gets dunked in eggs with a bit of maple syrup (and milk, if you’re me) and pan-fried into these bendy little golden discs that resemble a crepe, but are also a bit of French Toast at the same time?

They’re French Toast Crepes!

Is it a little bit ridiculous? Yes! Just embrace it!

It made for a fun, cute video, but this is one of those recipes we keep coming back to again and again in this house. I make them once every 1-2 weeks now. I’ve already seen many pictures from all of you who have already made them on Instagram! These are the tortillas I use:

My girls love these for breakfast, and so do I – but it’s also been an unexpectedly big hit as a snack and lunchbox item! Once you French Toast the tortillas, just roll them with jam and yogurt and keep them in the fridge for a grab-and-go! (No that’s not a ham and cheese roll up, it’s jam and yogurt – but never say never!)

These are ideal with a blueberry sauce, or just some thawed frozen fruit! Hope you love them – and thanks for the idea, Dini!

Whisk up your egg mixture.

Just like French Toast! Eggs, maple syrup, and a bit of milk or cream.

Dip the tortillas.

I exclusively use the Siete almond flour tortillas for this recipe. They don’t really absorb the mixture, but they do get nicely coated!

Pan fry and roll.

I like to melt a bit of butter in the pan, then pan fry those little crepes on both sides until nice and golden!

Roll, top, and serve!

They’re just so good.

Description

My kids and I love these French Toast Crepes for breakfast, snack, or even a lunchbox moment! Made with almond flour tortillas, they’re also gluten-free!


Ingredients

  • 3 eggs
  • 1 tablespoon maple syrup
  • 12 tablespoons of heavy cream
  • dash of cinnamon
  • 710 almond flour tortillas (I love the Siete ones!)

Instructions

  1. Make Batter: Whisk together the eggs, maple syrup, cinnamon, and cream if using.
  2. Fry The Crepes: Dip a tortilla in the batter so it’s covered on both sides, and fry in a pan over medium heat until cooked. Repeat for each tortilla.
  3. Serve: Fold and eat with maple syrup, or roll up with yogurt and jam in the middle.

Buffalo Chicken Burgers with Whipped Feta Spread

These Buffalo Chicken Burgers Are Hitting Just Right.

Everyone at the office ate A FULL BURGER for lunch last week. Normally our shoot days involve a bite here, a bite there. But these guys went down fast and furious and with a lot of vocal appreciation.

Bjork mentioned how much he liked them at least 7 times. I went back for seconds. So maybe buffalo chicken burgers are my new favorite meal?

The flavor is SO GOOD – you brush them with butter at the end, add the tang of the feta spread, pile some cooling lettuce on there and tuck it into a toasted brioche bun? Game over.

Can we also take a moment to just appreciate that they’re so easy to make? If you pick up a store-bought feta spread, like the new whipped feta one from Trader Joe’s, it’s even faster.

These go perfectly with a Simple Green Salad, or sheet pan Sweet Potato Fries, or Liz’s Roasted Broccoli! But also, they go perfectly in your hand with no plate and no frills as pictured above.

Easy and amazing buffalo chicken burgers! Piled high with crisp lettuce, a whipped feta spread, sitting atop of toasted brioche bun.


Ingredients

Units

Buffalo Chicken Burgers

  • 1 lb. ground chicken
  • 1/2 cup panko breadcrumbs
  • 1/3 cup hot sauce (I used Frank’s Red Hot)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt

Whipped Feta Spread

  • 6 ounces feta cheese (block or crumbles)
  • 4 ounces cream cheese
  • 1/4 cup Greek yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons water

Extra Stuff

  • 2 tablespoons melted butter + 2 tablespoons hot sauce for brushing
  • Buns
  • Lettuce

Instructions

  1. Make the Whipped Feta: Blend all the ingredients together in a small food processor until it incorporates into a thick and spreadable texture with flecks of feta.
  2. Mix the Burgers: In a medium bowl, mix the burger ingredients together. Form into 4-5 patties.
  3. Cook the Burgers: Heat a small bit of oil in a large nonstick skillet over medium high heat. Add burgers and cook for 3-4 minutes per side, until golden brown and the inside of the burgers is fully cooked (165 degrees).
  4. Brush with Butter: As the burgers are finishing cooking, brush the outside with the melted butter and hot sauce mixture.
  5. Finish: Arrange your burgers on buns with lettuce and a shmear of the whipped feta. SO GOOD.

Questions You Might Have About These Buffalo Chicken Burgers

How spicy are these?

Not too spicy! For a milder version, use 1/4 cup (or less) of buffalo sauce. (The level of heat will also depend on the type of sauce – I use Frank’s Red Hot). My kids will eat these with some ranch dressing.

Can you freeze these?

Yes, you can freeze them! To freeze before cooking, place the formed patties on a parchment-lined baking sheet and freeze them for 6-8 hours – this ensures they won’t stick together. Then put them in an airtight container and you’re good to go. To freeze after cooking, just place in an airtight container once they’ve cooled. For best results, when you’re ready to cook them, I would suggest thawing them overnight in the fridge.

How do you make these dairy free?

I would use a different spread in place of the feta spread – such as a plant based tzatziki, mayo, or an avocado spread!

How would you make these vegetarian?

I would use a veg protein base instead of chicken, like TVP – example of how it’s done in this recipe.

How would you make these gluten free?

Use gluten free buns, and gluten free panko. Also, ensure that your hot sauce is gluten free.
