Homemade Cauliflower Gnocchi

Dear savory little nuggets of pillowy goodness known as cauliflower gnocchi, we are here for you.

Or more accurately, cauliflower gnocchi, you are here for us, and right now especially.

These long (I repeat: LONG) days at home are begging for a fun-but-simple three ingredient recipe that results in soft little pillows of delight with a low-key easygoing golden browned exterior that can be served with, honestly, like, any sauce you have.

  • Creamy tomato or vodka sauce? Come to me.
  • Ragu? Two thumbs up.
  • Pesto of some sort? Yes, please. (I recommend kale pesto.)
  • Straight up olive oil or butter with some garlic? A++.

This cauliflower gnocchi business is altogether healthy-ish, low-maintenance, seriously delicious, and fun. Let’s talk about how to make this gem of a recipe.

How to Make Cauliflower Gnocchi

First, we’re going to cook a bag of frozen cauliflower. Use fresh if you want – but in these strange times, I find that simply opening a bag of frozen cauliflower is a little more manageable than cutting a full head and ending up with the little cauliflower granules all over the floor. ANYONE? But either way.

Then the cauliflower gets rid of all its water thanks to a few good squeezes, and here we have the intentionally dry cauliflower blob that is left:

Which will soon be mixed with flour and salt to turn into the cauliflower gnocchi DOUGH:

Which will soon be rolled into ropes, cut up into bite-sized pieces, and browned up in a pan to crispy-soft perfection.

Now, the sauce, as discussed, is chef’s choice!

Most of the times when I make this, I have it with kale pesto. Kale pesto is easy and healthy and… I don’t know, it just works.

But AS YOU CAN SEE….

I also really have a weakness for a good creamy / vodka / luscious tomato sauce situation. With pillows of gnocchi. Made out of cauliflower. What is life.

This recipe is based off the How Sweet Eats cauliflower gnocchi! Jess knows her stuff and her recipe was the first one I tried. All credit to her for the original that inspired this version + method! ❤

Homemade Cauliflower Gnocchi


Description

Three-Ingredient Homemade Cauliflower Gnocchi that is pillowy, crispy, and pairs perfectly with just about any sauce you’ve got. Easy, healthy-ish, and seriously delicious!


Ingredients

Cauliflower Gnocchi:

  • 1 16-ounce bag frozen cauliflower florets (about 5 cups fresh works, too)
  • 2/3 cup flour
  • 1 teaspoon salt

Instructions

  1. Bring a pot of water to boil over high heat. Add cauliflower and cook for 5-8 minutes, until tender. Drain.
  2. Lay cauliflower on a clean towel and allow to cool for 5-10 minutes. Squeeze excess water out of cauliflower. (Squeeze more! We want all that water out.)
  3. Place cauliflower in a food processor. Pulse until it makes crumbles. Add flour and salt. Pulse lightly until a soft, sticky dough forms.
  4. Place dough on a floured work surface. Cut into 4 sections. Roll each section into a rope. Cut each rope into little gnocchi pieces.
  5. Heat a large nonstick skillet over medium heat. Add a swizzle of oil and gnocchi and cook until browned. (You may need to do this in batches, depending on the size of your pan.) Add a splash of water at the end to steam – this ensures that the gnocchi will finish cooking through the inside.
  6. Add your sauce to the pan with the gnocchi. Toss to combine. Mwah!

Notes

Sauce ideas: The sauce in these pictures is just jarred tomato / pasta sauce with a little bit of cream added to it! You don’t even need a recipe. Kale pesto, as shown in the video, is also amazing! I also like a vodka sauce type situation. 

Boiling: I cut out the step of boiling! Deal with me. My gnocchi was REALLY good with exactly zero boiling, but I would still add a splash of water to steam everything at the end of your sauté time, just to ensure the flour fully cooks out of the center of each piece.

Check In #1

Well, if nothing else, I thought it might be nice to do a weekly check-in to get us through these times.

TL;DR: Still here, still staying home, still grateful and also sometimes still struggling.

How are you guys doing? What has this experience been like for you this week? And I say this week because doesn’t it feel like it sort of changes with the hour? Man. I feel like we’ve all lived a lot of lifetimes in the last few weeks.

I’m planning to post these weekly recaps on Fridays… until they aren’t our lives anymore. I don’t know when that is or what that looks like. But until then, here’s the recap list from the week:

This is just a check-in. That’s all, really. Just a chance to say hi out there to you in your home, from me in my home, on my couch, with toys strewn about everywhere and a pile of dishes taking over the kitchen counter. So, hi. I care about you, and I’m grateful for the internet right now, and I think life is better shared, so here we go.

Overall

This week earns a solid Meh rating.

It’s not like it’s all bad all the time, but it’s also not like this was the best week of my life, know what I mean?

I don’t know if you guys feel this, but I oscillate from “it’s all good” to “it’s all so hard” within about an hour, so I guess if you averaged out all those moments over the week – all the discouragement, all the exhaustion, all the hope inspired by people around the world – this is where I’m landing overall.

Please note the levels on the scale for these Quarantine Reports – the TOP POSSIBLE LEVEL is “good.” A solid good is the most potential I’ve got on any given week here.

Something Delicious

In addition to staying on top of groceries and keeping everyone fed and dealing with the never-ending dishes that our family of three generates (what in the world?!?!?!), I’ve also been trying to eat more fruits and vegetables lately. That is my big struggle because really, all I want to eat right now is cookie bowls.

The best foods I made / ate this week:

Something Outside

I’ve been trying to get outside every day (both for light exercise and for outdoor therapy), and since I’m spending a lot more time with Solvi these days, this has been a shared effort by the two of us.

Solvi LOVES – I repeat, L O V E S, to be outside.

This week, the weather had some gross moments. We were still there for it.

Something Connected

This week I met a few friends for a social distancing chat at the park. Yep, just like this – lawn chairs 6-or-more feet apart.

It was 60 degrees (I’m always cold which is why I’m still in my artic gear) and we all brought our own chairs and snacks and drinks and it was fabulous. It just felt so good to see and talk to people in real life.

Something To Look Forward To

We’re getting takeout on a recurring weeknight schedule now. Annnnd that is what I’m looking forward to.

This is one of the new traditions in our life because we badly need little things to look forward to right now DO YOU FEEL ME. We used to be more cautious about takeout and now we are like… taking-out quite frequently. Stamina for that effort was not great. Wednesday night takeout is a new staple part of our schedule and I am already excited about it.

Our takeout habit as of lately has involved aloo palak, shahi paneer, and a double order of naan from our little local Indian restaurant, and I do not see this changing anytime soon.

Caprese Chicken with Smashed Potatoes

Well, I guess chicken and sun dried tomatoes with melty cheese with balsamic drizzle and fresh basil served with a mile-high stack of golden crispy little potato smashers is at least a step in the right direction, right?

These are trying times, and cooking dinner feels, well, maybe to you it feels easy? But to me it feels like it requires monumental effort, physically and mentally and dishes-ly. Easy, minimal, and delicious is the three-way target I’m looking to land on.

Let me give you a brain break. Let me show you a cheat code. Let me present an idea that feels about 10x more fancy than it actually is.

It is called caprese chicken with smashed potatoes.

Here’s how you make it:

You sauté chicken. You top it with sundried tomatoes and cheese and put it in the oven. You garnish it. The end.

For the overachievers among us, or honestly, the people who kind of cannot stop with golden crispy potatoes (PRESENT), I would like to suggest the second most trickster thing in this post after the fake-fancy chicken which is SMASHED POTATOES.

Ideally these work best with the tiny potatoes that can be contained once smashed. But I understand, these are weird times, you might not have tiny potatoes on hand.

In which case I would suggest the exact same method with regular potatoes – with just slightly slower expectations for how they will look. Larger potatoes just want to fall apart a bit more. But does a hungry, tired, semi-moody person care about “falling apart a little bit”, or do they only care about the golden brown salty crispy part? I will leave you to decide as I eat the falling apart remnants of my golden salty crispy potatoes off the baking sheet.

Round out the experience, please. Pour yourself a nice drink in a pretty glass – anything from sparkling water with a squeeze of lemon to a proper glass of red wine – because THE LITTLE THINGS ARE THE BIG THINGS. Always, and especially right now. Let’s make a moment out of this.

Caprese Chicken with Smashed Potatoes


  • Author: Lindsay
  • Yield: 2-4 (I’d suggest 1 chicken breast and 2 potatoes per person)

Ingredients

For the Smashed Potatoes:

  • 1012 small red or gold potatoes
  • olive oil, garlic powder, salt, and pepper
  • fresh parsley or chives
  • lemon juice

For the Chicken:

  • 1 lb. chicken breasts (I like to cut 2 breasts lengthwise into thinner pieces to make a total of 4 pieces)
  • olive oil, salt, and pepper
  • 6-ish roasted or sun dried tomatoes
  • 2 ounces havarti cheese, in small slices (any cheese works – be flexible)
  • fresh basil
  • balsamic reduction (see notes)

Instructions

  1. Cooking the Potatoes: Preheat oven to 425 degrees. Cover potatoes with water in a pot. Bring to a boil. Once boiling, set timer for 10 minutes. Remove, drain, and allow to cool slightly.
  2. Smashing the Potatoes: One at a time, cover the potatoes with a clean dish towel. Mash gently it with your hand, holding it together so it doesn’t fall apart completely. Transfer to a baking sheet. Drizzle with olive oil. Sprinkle with garlic powder, salt, and pepper. Bake for 10-15 minutes.
  3. Cooking the Chicken: In an oven-safe skillet, heat a little oil in a skillet over medium heat. Sprinkle the chicken with salt and pepper. Brown on both sides (but it doesn’t have to be cooked through). Top with the sun dried tomatoes and cheese slices. Transfer the pan to the oven and bake for 8-10 minutes, until the chicken is cooked through and cheese is nice and melty.
  4. Serve: Top the chicken with basil and balsamic reduction. Serve with potatoes. Don’t forget your fancy drink BECAUSE YOU JUST MADE A MOMENT. Yum!

Notes

The balsamic reduction can be made by simmering about a cup of balsamic vinegar over medium heat in a small saucepan. When the liquid has reduced significantly and coats the back of a spoon, you can remove it from the heat. Voila! Balsamic drizzle for ya.

25 Pantry Recipes (That You’ll Actually Love)

Here we are. We are in a TIME, folks. It is uncharted territory for most of us. We are making the map as we go and wheeeew baby, there are a lot of feelings running us in a lot of different directions. We feel stuck and restless and unsure and tired and wired and ok-maybe-actually-enjoying-some-dedicated-time-together but also worried, anxious and please let me watch this show by myself and oh no what day is it.

But we are staying home because it is an act of love. An unprecedented act of love to take care of each other. To make the world safer for each other. To help build the world back up to a new normal, for each other. 

We know cooking can get very tricky these days this with limited access to grocery stores and sometimes even more limited items on shelves, so we pulled together a collection that relies heavily on pantry staples. The ingredient lists are short and the recipes are so very very flexible, (something we’re all really trying to practice being right now – oh, hello multiple Zoom meetings in one house with children and animals and are even the plants somehow louder?).

3 Ingredient Creamy Tomato Shells

Trying to keep ingredient lists as short as possible these days and this comes in at a whopping three. We’re using our best pal cashews to add a creamy, velvety twist on the standard pasta, and the jar of tomato sauce we’re probably all coming to know really well right about now.
